This easy Garlic Aioli is about to become your new favorite dipping sauce! Made with just 5 simple ingredients, it comes together in minutes and is perfect for dipping vegetables, french fries, and so much more. Once you try it… you’ll be hooked!
I’m ALL about the dips. In fact, I would venture to say that often times… no dip is a total deal breaker! Whether it’s roasted asparagus, roasted potatoes, crab cakes, or salmon patties… a delicious sauce makes ALL the difference. And this Garlic Aioli is one of my absolute favorites.
It’s essentially Garlic Mayo, made from a combination of mayonnaise, fresh garlic, lemon juice, salt, and pepper. It’s deliciously addictive – just like what you’d get at a restaurant – and so incredibly easy to make!
We love using it as a dip for zucchini fries or sweet potato fries, and it’s a great alternative to mayo on a sandwich or burger. And I love the fact that you can adjust all the flavors according to your specific taste!
Best of all, it’s literally ready in minutes. Which means you can have your favorite restaurant flavors at home… any time you’re craving them!
what you’ll need for this recipe
Mayonnaise – I used 1 cup of mayo as the base of this recipe. Although traditional aioli is made with a mixture of olive oil and egg yolks, this easy version starts with mayo.
Lemon juice – I added 2 Tablespoons of lemon juice. For the best flavor, I would strongly recommend using fresh squeezed lemon juice.
Garlic – I also added 3 large garlic cloves, finely minced. For best results, use a garlic press!
Salt & pepper – I seasoned it simply with 1/4 teaspoon salt and 1/4 teaspoon fresh ground pepper.

If time allows, mix this up 20-30 minutes prior to using. This will give the flavors a chance to blend.
Combine. Combine all ingredients in a small mixing bowl. Stir well.
Enjoy. Use immediately or refrigerate for later use. This garlic aioli recipe can be stored in an airtight container in the refrigerator for up to 2 weeks.
how to make roasted garlic aioli
Roasting the garlic before making aioli will give you a mild, nutty flavor without the bite of raw garlic. To roast individual garlic cloves:
- Place unpeeled cloves in a tin foil packet
- Drizzled with a bit of olive oil
- Roast at 400°F for 10-15 minutes or until tender
- Add roasted garlic cloves to the other aioli ingredients in a small food processor; blend until smooth.
Recipe Variations
- Add 1 – 2 Tablespoons fresh minced basil, parsley, cilantro, or any of your favorite fresh herbs
- Use light mayo for a lower fat alternative
- Substitute garlic powder in a pinch (fresh garlic is strongly recommended)
- Adjust the garlic flavor by using more or fewer garlic cloves
- Add 1/2 teaspoon Italian seasoning or any of your favorite seasoning blends
- Add 1/4 – 1/2 teaspoon Dijon mustard
- Add a spoonful of your favorite basil or sun-dried tomato pesto
- Stir in crushed red pepper flakes for a spicy twist

Iihave been making this dip for a couple years now. We eat it with zucchini fries but it is good on absolutely everything! It is so simple to make! My family always asks me to make this for family parties! I recently had Bariatric surgery so I am tweaking the original recipe by using 1/2 C low fat mayo and 1/2 C of nonfat original Greek yogurt!
