Truth be told, potatoes don’t really do much for me. Gasp. I know. It’s almost unheard of, really. I mean who doesn’t love potatoes???
Well, I have to say. I finally found a way of preparing them that I can get behind. Of all the potato recipes out there….I guess what I really needed was something simple. Something basic. And these oven roasted potatoes are it!
Simply seasoned with olive oil, kosher salt, onion powder, garlic powder, and fresh ground pepper, they’re definitely basic. And yet, they’re absolutely delicious! And seriously addictive.
I’ve been making them nonstop ever since I discovered how much I love them. And the good news is my family feels the same way about them. They’re the perfect side for nearly any meal…and even delicious all on their own.
Whether you love potatoes (like most people) or just really want to love them (like me!) this recipe is guaranteed to be a fast favorite. And one you come back to time and time again!
Ingredients:
- 1 1/2 lbs. mini potatoes
- 3 Tbsp. olive oil
- 1/2 tsp. kosher salt
- 1/2 tsp. onion powder
- 1/2 tsp. garlic powder
- Fresh ground pepper
How to roast potatoes:
- Rinse and dry potatoes, then cut them into quarters.
- Place potatoes in a large bowl.
- In a separate small bowl, combine olive oil and seasonings. Mix well.
- Pour olive oil mixture over potatoes and toss to coat.
- Spread on a rimmed baking sheet; bake at 425° for 30 minutes.
Best potatoes for roasting:
The best answer is whatever kind you like best! I prefer using mini potatoes because the flavor tends to be more concentrated, and I find they have a great texture for roasting. You can use mini red potatoes (also called new potatoes), fingerling potatoes, or a petite mixture like the ones I used. Most grocery stores have a wide variety to choose from.

The sky’s the limit when it comes to seasoning potatoes. Feel free to use similar seasonings to your main dishes OR whatever you might have in your spice cabinet! Here are some popular choices:

Best temperature for roasting potatoes:
I find that the BEST temperature is 450°, as it allows the outside to become nice and crispy while the inside remains tender and fluffy. If you prefer yours less crispy, feel free to lower the temperature to 400° or 425°.

- 350° : 35 minutes
- 400° : 30 minutes
- 425° : 25-30 minutes
- 450° : 20-25 minutes
