Black Bean Soup, loaded with veggies and made in a blender, then topped with hot sauce for an added kick!
Can you tell there’s a chill in the air here in Wisconsin? It’s officially that time of year – SOUP time! We just enjoyed our Indian Summer and now I think it’s safe to say that fall is here to stay. Time to get our soup on! There’s nothing like a delicious bowl of warm soup on a chilly fall day…..and I love having plenty of options to choose from!
One of our favorites? Black Bean Soup! Around here, we LOVE our Mexican food and this soup is loaded with delicious Mexican flavors like black beans, cilantro, tomatoes, peppers, cumin, and…..of course….hot sauce! It’s incredibly easy to make (just put the ingredients in a blender and voila) and comes together in no time at all, which makes it a perfect meal for busy fall days.
Best of all, though, this is a soup our whole family devours! It’s got enough flavor to keep the kids interested….and enough kick to keep the adults happy! I love using hot sauce for the heat because it’s so easy to adjust on a bowl-by-bowl basis. Perfect for kids who just want a mini-kick and for adults for love to get their #sauceon!
Speaking of getting your sauce on…..I recently had the chance to check out El Yucateco Hot Sauce through #CollectiveBias and Walmart. They have a variety of flavors, including Red Habanero, Green Habaero, XXXtra Hot Kutbil-ik, and Black Label Reserve, a flavor that is exclusive to Walmart. We are a hot sauce loving family, so we are always eager to try new types….and we had so much fun trying out all the different flavors in our Black Bean Soup! Especially Jorden, who would eat hot sauce on everything if I let him…….!
So whether you want a little heat or a lot, this soup is just right! Happy fall, my friends! Soup’s on!!
Blender Black Bean Soup w/Hot Sauce
- 2 15 oz. cans black beans, drained and rinsed
- 1 15 oz. can diced tomatoes
- 1 1/2 c. chicken broth
- 1 hatch pepper seeds removed, chopped
- 1/2 c. onion chopped
- 1/3 c. cilantro chopped
- 1 tsp. cumin
- 1 tsp. minced garlic
- 1/2 tsp. salt
- El Yucateco Hot Sauce to taste
- Place all ingredients in blender and blend to desired smoothness.
- *Hot Sauce can either be added directly to blender OR added to individual bowls based on preference.
- Pour blended soup into saucepan and heat through.
