And these Bacon Wrapped Brussels Sprouts are no exception. Tender brussels wrapped in crispy bacon with caramelized brown sugar and the most AMAZING dipping sauce? SIGN ME UP. Guaranteed to be your new favorite… and everyone else’s, too!
Ingredients you’ll need
Brussels sprouts – Brussels sprouts are the star of the show! I used a 1 pound bag from my local grocery store. You can also use brussels from a stalk if you prefer.
Bacon – 1 pound of bacon works perfectly with the pound of brussels sprouts. You may have a few strips of bacon OR a few brussels left over, depending on the size.
Brown sugar – Brown sugar is the best choice for this recipe because it caramelizes well and gives these little bites a depth of flavor that granulated sugar wouldn’t offer. I used 1/2 cup of light brown sugar.
Salt & pepper – To the brown sugar, I added equal amounts of salt and pepper to help bring out all the other flavors in the recipe. I used 1/2 teaspoon of each, but you can adjust these amounts according to your preferences.
How to make Bacon Wrapped Brussels Sprouts
Trim the brussels sprouts – Start by rinsing the brussels sprouts to remove any dirt. Then remove any damaged outer leaves and trim the bottoms.
Make the brown sugar mixture – In a small mixing bowl, combine the brown sugar, salt & pepper and mix well. This is the mixture you will rub on the bacon to get that delicious sweet, caramelized flavor.
Prep the bacon – Lay the bacon out in strips on a rimmed baking sheet lined with parchment paper. Spoon the brown sugar mixture evenly over each strip, using the back of the spoon to spread it the entire length of the bacon.
Roll & secure – Place a brussels sprout at one end of each strip, then carefully roll the bacon around the sprout, securing the end with a toothpick.
Bake – Bake at 400°F 30-35 minutes, flipping halfway through (or until bacon is crispy).
What to dip them in
I always LOVE a good dipping sauce. To me, it makes the dish! Which is exactly why these brussels sprouts needed their very own dip: Hot Honey Mayo. This delicious dip is along the lines of honey mustard, but with a spicy kick. And let me tell you… it’s the perfect pairing for these little bites.
Here’s what you need:
Mayo – I used 1/4 cup of Hellman’s full fat mayo as the base for this sauce. You can use a lower fat version or any brand you prefer. I wouldn’t suggest substituting Miracle Whip in this recipe.
Honey – 1 Tablespoon of honey gives this sauce just the right amount of sweetness. Feel free to use a little more or less according to your tastes.
Cayenne – It wouldn’t be hot honey without the heat! I tried a few different versions using sriracha, hot sauce, and cayenne… and the clear winner was cayenne. I used just 1/4 teaspoon, and found that I needed to let it sit for a few minutes to let the flavor develop.
