Simple syrup. It’s a game changer! It’s easy to make – with just 2 ingredients – and the best way to add a splash of sweetness to your favorite drinks, desserts, fruit salads, and more.
It’s also incredibly easy to customize with fun flavors. Over the years, I’ve made Rosemary Simple Syrup, Strawberry Rhubarb Simple Syrup, Mango Simple Syrup, and more… and what I love about it is the way it infuses drinks with so much amazing flavor.
This Coconut Lime Simple Syrup is one of my all time favorites, not just because it’s such a perfect flavor combination for summer, but also because it’s SO incredibly versatile! It makes the perfect addition to margaritas, mojitos, and sangrias… and 100% makes any drink feel just a little more tropical.
Ingredients
Water – This recipe starts with cold water. I always prefer using filtered water, but tap works too.
Sugar – To the water, you’ll add an equal amount of granulated sugar. This makes the simple syrup sweet and syrupy.
Shredded coconut – I used sweetened, shredded coconut, which is available in the baking aisle at any grocery store.
Lime juice – The final ingredient is lime juice. If possible, use fresh!
How to make Coconut Lime Simple Syrup
- Combine water, sugar, and shredded coconut in a small saucepan.
- Bring to a boil, stir until sugar dissolves completely.
- Remove from heat, add fresh lime juice, and set aside to cool.
- Once cool, strain simple syrup through a fine strainer to remove shredded coconut.
- Store or use immediately.
Storage tips
Simple Syrup can be stored in an airtight container in the refrigerator for up to one month. To use, simply remove from the fridge and add it to drinks as desired.
Drinks using Coconut Lime Simple Syrup
- Add a splash in place of the sugar in your Mojitos
- Use it to sweeten up your next Gimlet
- Add a tropical twist to Frozen Mango Margaritas
- Use it in place of regular simple syrup in a pitcher of Pineapple Sangria
- Add a coconut twist to your Pineapple Margaritas
- Use dry white wine and coconut lime simple syrup in this Tropical Sangria
- Add it to Palomas for a unique flavor combo
