Let’s talk about summer parties for a minute….shall we? Because our weekends are filling up with them. Quickly! And even though that probably makes it sound like we have the most happening life EVER….the truth is they’re all for kids. Every. Single. One of them. I guess that’s what I get for having such a big family.
Between all the nieces and nephews in my family, there are 7 summer birthdays. And when you add in school friends and family friends and graduations….well….let’s just say it’s hard to find a weekend in summer where we’re not partying with kids. And believe me….we’re trying!
Because 4 of those 7 summer birthdays are actually OUR kids (I know, not quite as bad as I made it sound)…..and we have yet to schedule any parties. Not one. Yikes! I guess it’s probably time to get a move on. Not just because the kids are getting antsy, and not just because our annual summer birthday bash is a tradition, but because I already have the menu for it set! Which is clearly the most important part!
It will probably come as no surprise to you that this Pineapple Sangria plays a central role. Because if there’s one thing our parties are known for…..it’s sangria! And this Pineapple Sangria is the *perfect* taste of summer. Made with prosecco, pineapple juice, white rum, simple syrup, and a WHOLE PINEAPPLE….this is about as good as it gets. Of course, I would also say that about my Tropical White Wine Sangria and my Strawberry Shortcake Sangria and my friend Lisa’s Sunset Sangria….but what can I say? I LOVE sangria! And once you try my Pineapple Sangria I’m sure you’ll see why. As a bonus? It definitely makes all those summer kid parties a little more fun, if you know what I mean. Which….I’m guessing you do. Pineapple Sangria
Ingredients
- 1 bottle prosecco
- 1 1/2 c. pineapple juice
- 1/2 c. white rum
- 1/4 c. simple syrup
- 1 whole pineapple cubed
- 1 lime thinly sliced
- 1 lemon thinly sliced
- maraschino cherries for garnish
Instructions
- Combine all ingredients in a large pitcher.
- Double the recipe for a larger group!
