Rosemary Simple Syrup is a simple, delicious way to upgrade any cocktail. Made with just 3 ingredients, it adds the most amazing flavor and complexity to all your favorite drinks… so you can play fancy bartender right in your own home!
Is anyone else obsessed with the specialty cocktail lists at bars and restaurants? I absolutely love looking through them (even when I have no idea what half of the ingredients even are)… and I’m always up for trying something new.
And if there’s one trend I’ve definitely noticed… it’s the trend of adding herbs to cocktails. And rosemary is always high on the list.
Quite honestly, I’ve always loved drinks with herbaceous notes. Like this Blackberry Basil Vodka Lemonade or these Raspberry Basil Champagne Spritzers And this Rosemary Simple Syrup is the BEST way to achieve it.
🌿 Ingredients
- 1/2 cup water
- 1/2 cup granulated sugar
- 2 sprigs fresh rosemary
📋 Instructions
Combine the ingredients – in a small saucepan, combine water, sugar, and fresh rosemary.
Bring to a boil – bring the mixture to a boil, stirring occasionally until sugar is completely dissolved. Boil for one minute.
Steep – remove the pan from the heat, cover, and let steep for 30 minutes.
Strain – strain the syrup into a glass jar, cover, and refrigerate until ready to use.
🍯 Recipe variations
- Substitute 1/2 cup honey for the granulated sugar and heat the water until hot (not boiling) to dissolve it
- Use any of your favorite fresh herbs in place of rosemary
- For a more pungent flavor, add more rosemary
- For less sweetness, cut the sugar (or honey) in half
- Combine the rosemary with your favorite fruit for a combination simple syrup

Can you make this same syrup with other herbs? I have chocolate mint in my herb garden. Have you tried it with mint?
