Homemade Greek Salad Dressing is the perfect addition to all your favorite recipes! A classic combination of olive oil, lemon juice, red wine vinegar, and simple seasonings, this vinaigrette is our go-to for Greek salads and more… and so much better than store bought!

If it were up to me, I’d probably make salads for dinner most nights. I love how light and fresh and flavorful they are… and I love the fact that there are hundreds of ways to do them.
From Chopped Italian Salad to Caesar Salad to Wedge Salad and more… if you can dream it, you can make it. The more variety, the better!
But if there’s one thing I know, it’s that a good dressing makes ALL the difference. And homemade is always best. As much as I love a good creamy dressing, like Buttermilk Ranch or Blue Cheese, there’s a time and place (and salad) for everything! And some salads call for Greek Vinaigrette.
This Homemade Greek Vinaigrette is easy to make and uses simple ingredients… which, if you ask me, all salad dressings should! I kept mine extra easy by using dried oregano, but fresh herbs are always delicious, too.
what you’ll need for this recipe
Olive oil – Olive oil is the base of this vinaigrette. I used extra virgin olive oil (EVOO) which is the least processed of all olive oils and has a rich, delicious flavor.
Vinegar – I added red wine vinegar, which is traditionally used in Greek dressings. Substitute white wine vinegar or golden balsamic vinegar for a fun flavor twist.
Lemon juice – 2 Tablespoons lemon juice adds a touch more acidity and delicious, bright lemon flavor.
Garlic – Fresh minced garlic cloves add delicious flavor and can be adjusted according to taste.
Dijon – Dijon mustard adds flavor and acts as an emulsifier, helping all the ingredients combine more easily.
Seasonings – I used simple seasonings – dried oregano, salt & pepper.

Combine all ingredients in a jar with a lid. Close the lid tightly and shake vigorously to combine all the ingredients. Use immediately, and shake before every use.
storage tips
Greek Vinaigrette can be stored in an airtight container in the refrigerator. I like to store it in a glass jar with a lid so it can easily be shaken before using. Ingredients may separate when cold, so it’s best to let it stand at room temperature for a while before using.
