This Strawberry Rhubarb Champagne Spritzer is deliciously sweet, simple, and perfect for summer! Made with just 3 ingredients… including homemade strawberry rhubarb simple syrup!

There are some things that just go together. Like peanut butter and jelly. Ham and cheese. Cookies and milk. It’s not that you can’t enjoy one without the other… it’s just that they’re arguably better together.
Kind of like strawberries & rhubarb. Like I said… I enjoy them both on their own (offer me a slice of Strawberry Bread or Rhubarb Bread and there’s no way I’m turning you down) but there’s something about the strawberry + rhubarb combo that really is a match made in heaven.
And as much as I love strawberry rhubarb desserts, I also love a good seasonal cocktail. And this Strawberry Rhubarb Champagne Spritzer is more than good. It’s absolutely delicious!
Made with homemade strawberry rhubarb simple syrup, rhubarb bitters, and your favorite champagne or prosecco, it’s a simple cocktail that’s slightly unexpected and SO perfect for summer.

what you’ll need for this recipe
Strawberry rhubarb simple syrup – Simple syrup adds sweetness and strawberry rhubarb flavor to this spritzer. I used equal parts sugar, water, strawberries, and rhubarb.
Rhubarb bitters – Rhubarb bitters are a delicious addition to any spring or summer cocktail, adding extra rhubarb flavor with just a few dashes.
Champagne – Bubbly, dry champagne is the perfect pairing for the sweet strawberries and rhubarb. I used Brut Cava, but any type of brut champagne or prosecco works well.

how to make a strawberry rhubarb spritzer
Make the simple syrup. In a small saucepan, combine 1/4 cup sugar and 1/2 cup water. (For a larger batch, use 1/2 cup sugar and 1 cup water.) Bring the mixture to a boil, then add chopped rhubarb and sliced strawberries. Cover with a lid and remove from heat. Set aside to cool, then strain to remove the fruit. Simple syrup can be stored in an airtight container in the refrigerator for up to 2 weeks.
Combine the ingredients in a coupe glass. Pour 1/2 ounce simple syrup into a champagne flute or coupe glass. Add 2-3 dashes of rhubarb bitters. Top with chilled champagne.
Garnish. Garnish with a fresh strawberry.

Recipe Variations
- Substitute strawberry rhubarb liqueur for the simple syrup
- Add a splash of vodka or gin
- Add fresh muddled strawberries
- Use any type of sparkling wine
- Use rhubarb wine and a splash of seltzer
- Adjust the sweetness by adding more or less simple syrup
make-ahead & storage tips
Leftover simple syrup can be stored separately in an airtight bottle or jar in the refrigerator. To make a champagne spritzer in advance, combine the ingredients in a large pitcher and chill, covered, for up to 2 hours. Due to the fizzy nature of champagne, I wouldn’t recommend making it more than 2 hours in advance.
