Ingredients

Champagne Spritzer

  • 1 bottle Brut champagne
  • 6 ounces strawberry rhubarb simple syrup
  • 12 dashes rhubarb bitters or more, to taste
  • 6 strawberries

Simple Syrup

  • 1 cup water
  • 1/2 cup sugar
  • 1 cup rhubarb chopped
  • 1 cup strawberries sliced

Instructions

Simple Syrup

  • Combine water and sugar in a medium saucepan; bring to a boil.
  • Remove from heat. Stir in rhubarb and strawberries.
  • Cover and let stand until cool.
  • Strain syrup before using.

Champagne Spritzer

  • Add 1 ounce simple syrup and 2-3 dashes rhubarb bitters in a champagne flute or coupe glass.
  • Top with chilled champagne.
  • Garnish with fresh strawberries.

Notes

Recipe Variations

  • Substitute strawberry rhubarb liqueur for the simple syrup
  • Add a splash of vodka or gin
  • Add fresh muddled strawberries
  • Use any type of sparkling wine
  • Use rhubarb wine and a splash of seltzer
  • Adjust the sweetness by adding more or less simple syrup

 

Make-ahead & storage tips

Leftover simple syrup can be stored separately in an airtight bottle or jar in the refrigerator. To make a champagne spritzer in advance, combine the ingredients in a large pitcher and chill, covered, for up to 2 hours. Due to the fizzy nature of champagne, I wouldn't recommend making it more than 2 hours in advance.
