Every now and then a salad comes along that puts all other salads to shame. And THIS is one of those salads. It might seem basic… and it is… but as we all know, sometimes basic is best.
I first tried it at one of my favorite lunch restaurants and was blown away by the fact that something so simple could be SO GOOD. And I think it’s because every single ingredient is incredibly flavorful.
From the brussel sprouts to the parmesan to the Marcona almonds and balsamic glaze, every ingredient is packed with flavor. And the end result is nothing short of perfection.

what you’ll need for this recipe
Mixed greens – I used a 5 ounce bag of spinach & arugula salad mix, finely chopped. You can substitute any type of mixed greens, but I used this mix because it’s hearty and can hold up to the other ingredients.
Brussel sprouts – I also used 1/2 pound of shaved brussel sprouts, which are essentially thinly sliced sprouts. You can shave them using a mandoline or sharp knife. You can also use a food processor with a slicing attachment. Alternately, you can look for packaged shaved brussel sprouts at your grocery store.
Parmesan – I added 1/2 cup of shaved Parmesan cheese, which can either be purchased or shaved using a cheese shaver or sharp knife.
Basil – I added 1/4 cup of chopped, fresh basil for delicious flavor.
Marcona almonds – I also added 1/4 cup of Marcona almonds, which provide delicious flavor and crunch to the salad.
Dressing – For the dressing, I used homemade Lemon Vinaigrette. You can also use oil & vinegar, Balsamic Vinaigrette, or any of your favorite dressings.
Balsamic glaze – I added a drizzle of balsamic glaze for a layer of sweetness to round out the flavors in the salad. You can make your own or use a store bought version.

Prep the vegetables. Chop the mixed greens and basil and shave the brussel sprouts.
Toss with vinaigrette dressing. Combine the vegetables in a large bowl, drizzle with vinaigrette, and toss to coat.
Add remaining ingredients. Add the Parmesan, almonds, and balsamic glaze.
Recipe Variations
- Substitute regular roasted almonds, pine nuts or any of your favorite nuts for Marcona almonds
- Add additional chopped veggies, such as mushrooms, green onions, avocado, or tomato
- Add chopped apples or orange wedges
- Substitute crumbled feta or goat cheese for the Parmesan
- Use any type of vinaigrette – homemade or store bought
- Drizzle with olive oil and vinegar instead of dressing
- Use packaged shaved brussel sprouts, which can be found in select grocery stores

Knife: Remove any wilted outer leaves from the brussel sprouts. Working one at a time, hold the sprout at the base and slice cross-wise until you reach the stem.
Mandoline: Remove the any wilted outer leaves from the brussel sprouts. Use a fork to hold each sprout at the stem, then slide the sprout repeatedly down the mandoline to slice.
Food processor: Remove the stem and any wilted outer leaves from the brussel sprouts. Use the slicing attachment to shave larger amounts of sprouts.

Shaved Brussel Sprout Salad
Ingredients
- 5 ounces mixed greens I used spinach + arugula
- 1/2 pound shaved brussel sprouts
- 1/2 cup shaved Parmesan cheese
