The ULTIMATE Breakfast Bowl! Loaded with breakfast potatoes, scrambled eggs, bacon, sausage, and cheese… it’s a complete meal all on its own… and the perfect way to start the day!
Breakfast! It’s the most important meal of the day, and it also happens to be my personal favorite. So if you ask me… the heartier, the better! I’m seriously always a sucker for a big, hearty breakfast (Western Omelette, anyone?) and this Breakfast Bowl is exactly that.
It starts with homemade breakfast potatoes, followed by scrambled eggs, sausage, bacon, and cheese… and the end result is a completely DELICIOUS breakfast that will keep you satisfied all day long.
I love topping mine with salsa, sour cream, and a healthy dose of sliced avocado or guacamole. And not that it needs any sides… but if you’re looking for a little something sweet, it’s especially delicious paired with my favorite fruit salad or mimosas!
What you’ll need for this recipe
Breakfast potatoes – Breakfast potatoes are the perfect base for this bowl. I made my favorite Potatoes O’Brien, which include sautéed peppers and onions. You can feel free to substitute hash browns, roasted potatoes, or any of your favorites.
Eggs – No breakfast is complete without eggs, and for this recipe I decided to scramble them. Scrambled eggs hold up well to the other ingredients in this bowl, but over easy or sunny side up would be equally delicious!
Sausage – Breakfast sausage is a breakfast time MUST, so I didn’t think twice about adding it to this recipe. I used pork sausage links, but you can feel free to use turkey sausage, chicken sausage, or any type you prefer.
Bacon – You know what they say about bacon. It makes everything better… including this Breakfast Bowl! I used regular cut bacon, but thick cut or even Canadian bacon would also be delicious. I also fried it on the stovetop, but if you’re looking for an even crispier option, try my Air Fryer Bacon!
Cheese – Melted cheese gives this recipe added flavor and that gooey texture we all know and love. I used a Cheddar blend, but you can feel free to use any type of cheese you enjoy.
Salt & pepper – Because of all the deliciously flavorful ingredients in this recipe, I kept the seasoning simple with just salt & pepper.
Toppings – Last but not least, the toppings! I added sour cream, salsa, and fresh chives, but the sky is the limit here! Feel free to add any of your favorites or see below for suggestions.
How to make a Breakfast Bowl
Prepare the breakfast potatoes. Make the potatoes according to recipe or package instructions. If using leftover potatoes, re-heat them in a medium skillet on the stovetop.
Cook the sausage & bacon. Chop the sausage links and bacon to desired size pieces, then fry them in a small skillet until browned and crispy. (*For even cooking, add the sausage first and cook 1 minute before adding the bacon.)
Scramble the eggs. In a small bowl, whisk the eggs. Add 1 Tablespoon milk or water as desired and season with salt and pepper to taste. Melt 1-2 teaspoons olive oil or butter in a small skillet, then add the whisked eggs and scramble.
Add the cheese. Sprinkle the eggs with cheese, then cover for one minute until cheese is melted.
Assemble & garnish. Divide the potatoes between 2 bowls. Add eggs and garnish as desired.
Recipe Variations
- To save time, use your favorite frozen breakfast potatoes
- Substitute over easy or sunny side up eggs for the scrambled eggs
- Use any type of shredded or crumbled cheese, including mozzarella, pepper jack, Parmesan, or feta
- Add additional veggies such as roasted broccoli, mushrooms, or spinach
- Add cooked ham or Canadian bacon
- Make it meatless by omitting the sausage and bacon
- Top it with fresh pico de gallo
- Add sliced avocado or guacamole
Make Ahead Tip
Enjoy these bowls all week long by making the breakfast potatoes, sausage, and bacon in advance. Then simply reheat the desired amount in a small skillet, top with freshly scrambled eggs and cheese, garnish, and enjoy! This tip takes the prep time down to 10 minutes or less!
