🥔 About these Twice Baked Mashed Potatoes

If you’ve ever tried Twice Baked Mashed Potatoes, you know just how delicious they are. But let’s be real for a minute. They take a long time to make! Between baking the potatoes, making the regular mashed potatoes, adding the extra ingredients, and re-baking them… you’re looking at hours. And who’s got time for that!?

This recipe is different. Because instead of starting with raw potatoes, it starts with a package of Idahoan Loaded Baked Mashed Potatoes. Which is full on flavor and ready in minutes. No more baking potatoes in the oven for an hour before you can even get started!

To the mashed potatoes, I added salted butter, sour cream, cream cheese, Parmesan cheese, and fresh herbs. Since I knew I’d be topping them with gravy, I decided not to add any milk, but if you like yours extra creamy feel free to add ¼ cup of milk before baking.

The end result is a rich, creamy mashed potato casserole that literally melts in your mouth. Traditional… but better.

Full Thanksgiving dinner for a family of 5

🧀 Ingredients

  • 1 (8 ounce) package Idahoan Loaded Baked Mashed Potatoes
  • 4 tablespoons salted butter
  • 1/2 cup sour cream
  • 4 ounces cream cheese
  • 1 cup finely shredded Parmesan cheese
  • 1-2 tablespoons fresh minced herbs (I used a combination of rosemary, sage, and thyme)

📋 Instructions

Make the mashed potatoes – Prepare the potatoes according to package instructions.

Add the remaining ingredients – To the mashed potatoes, add the butter, sour cream, cream cheese, Parmesan, and herbs.

Bake it – Transfer the potatoes to a 1.5 quart baking dish. Bake at 375° for 30-40 minutes.

Serve it – Garnish with additional fresh herbs as desired. Serve with McCormick Turkey Gravy.

🥓 Recipe variations

  • Add cooked, chopped bacon to the mixture before baking
  • For extra creamy potatoes, add 1-4 cup milk
  • Substitute cheddar, Monterey jack, or any of your favorite cheeses
  • Use dried herbs in place of fresh
  • Add 2 cloves minced garlic
  • Cover before baking to reduce browning

Leftovers can be stored, covered, in the refrigerator for up to 5 days. To reheat, place them in an oven-safe baking pan, cover with foil, and bake at 350° for 10-15 minutes or until heated through.

  1. I made these as written (minus the splash of milk… ) but had to use a different brand of loaded baked mashed potatoes… Perhaps it was an issue? These are delicious no doubt about that… But the consistency wasn’t great… I like my potatoes to be a little more firm and a lot less runny..These just kind of melted all over the plate and didn’t hold their shape at all… I would make these again but cook the potatoes myself instead of using a pre-packaged version.
