    These zesty Shrimp Tacos are packed with amazing flavor and so easy to make. Loaded with citrus slaw, pico de gallo, and creamy chipotle mayo, they're light, fresh, and incredibly delicious. Perfect for Cinco de Mayo, Taco Tuesday, or an easy weeknight dinner!

    Are you a taco fan? I mean....who isn't, really!? Because what's not to love? But the real question is this: are you willing to get adventurous with your tacos? Or are you more of a traditionalist?

    I love tacos any way I can get them, but at the end of the day, I really love mixing things up and trying new flavor combinations. And the flavors in these Shrimp Tacos are the BEST.

    Between the seasoned shrimp and the crunchy citrus slaw and the fresh pico de gallo, these tacos have a little bit of everything. And the drizzle of chipotle mayo on top only makes them better.

    One of the things I love most about this taco recipe is that the individual components are easy to make in advance, so there's no last minute prep. Which makes these Shrimp Tacos the perfect party food!

    🍤 Ingredients

    For the shrimp:

    *I used fresh, pre-cooked shrimp to keep this recipe nice and easy. If you prefer uncooked shrimp, though, feel free to substitute!

    • 1 lb. shrimp
    • 1 Tablespoon olive oil
    • 1 teaspoon lime juice
    • ½ teaspoon cumin
    • ½ teaspoon chili powder
    • ⅛ teaspoon garlic salt

    For the Citrus Slaw:

    • 2 c. cole slaw mix
    • ½ c. cilantro, chopped
    • 2 Tbsp. lime juice
    • 2 Tbsp. pineapple juice
    • ⅛ tsp. salt

    For the Pico de Gallo:

    • 1 c. diced fresh tomatoes
    • ⅓ c. diced onion
    • ⅓ c. chopped cilantro
    • ½ jalapeno, minced
    • 1 tsp. lime juice
    • ¼ tsp. kosher salt

    For the Chipotle Mayo:

    • ¼ c. mayo
    • ½ tsp. honey
    • ½ tsp. adobo sauce
    • 8 flour or corn tortillas

    For the tortillas:

    Traditional shrimp tacos use corn tortillas, but the best answer is you can use flour OR corn. Whichever you prefer! For this recipe, I used corn tortillas heated in a small amount of olive oil in a skillet.

    📋 Instructions

    1. Prepare citrus slaw by combining all ingredients in a small bowl; set aside.
    2. Prepare pico de gallo by combining all ingredients in a small bowl; set aside.
    3. Prepare chipotle mayo by combining all ingredients in a small bowl; set aside.
    4. Toss shrimp in olive oil and seasonings; heat over medium-high heat in a skillet until heated through.
    5. Heat tortillas on the stovetop.
    6. Assemble tacos as desired.
    7. Enjoy!

    ⏱ To prep in advance

    It's easy to make the individual components in advance and keep them in the refrigerator until the tacos are ready to be served. Simply prepare the citrus slaw, pico de gallo, and chipotle mayo separately and store them in airtight containers. You can even toss the shrimp in the olive oil and seasonings, store it in the fridge, and heat just before serving.

    5. Heat tortillas in a small amount of olive oil on the stovetop.
