Shrimp Tacos

These zesty Shrimp Tacos are packed with amazing flavor and so easy to make. Loaded with citrus slaw, pico de gallo, and creamy chipotle mayo, they're light, fresh, and incredibly delicious. Perfect for Cinco de Mayo, Taco Tuesday, or an easy weeknight dinner!

Ingredients

Shrimp

  • 1 lb. shrimp I used pre-cooked
  • 1 Tbsp. olive oil
  • 1 tsp. lime juice
  • 1/2 tsp. cumin
  • 1/2 tsp. chili powder
  • 1/8 tsp. garlic salt

Citrus Slaw

  • 2 c. cole slaw mix
  • 1/2 c. cilantro chopped
  • 2 Tbsp. lime juice
  • 2 Tbsp. pineapple juice
  • 1/8 tsp. salt

Pico de Gallo

  • 1 c. diced fresh tomatoes
  • 1/3 c. diced onion
  • 1/3 c. chopped cilantro
  • 1/2 jalapeno minced
  • 1 tsp. lime juice
  • 1/4 tsp. kosher salt

Chipotle Mayo

  • 1/4 c. mayo
  • 1 Tbsp. adobo sauce
  • 1 tsp. honey
  • 8 flour or corn tortillas

Instructions

  • Prepare citrus slaw by combining all ingredients in a medium bowl. Toss and set aside.
  • Prepare pico de gallo by combining all ingredients in a medium bowl. Toss and set aside.
  • Prepare chipotle mayo by combining all ingredients in a small bowl and mixing until creamy.
  • Toss shrimp in olive oil and seasonings; heat over medium-high heat in a skillet until heated through.
  • Heat tortillas in a small amount of olive oil on the stovetop.
  • Assemble tacos as desired.
  • Enjoy!
