Everyone loves a good Reuben, and these Reuben Meatballs are the ultimate fun twist! Loaded with creamy Swiss cheese, crisp sauerkraut, and tangy Thousand Island dressing… they’re hot, cheesy, and SO delicious!

Case in point: these Reuben Meatballs. Made with Farm Rich Homestyle Meatballs, sauerkraut, shredded Swiss cheese, creamy Thousand Island dressing, cream of onion soup, and a sprinkle of caraway seeds, they have all the flavors of the Reuben sandwich we all know and love… in a deliciously gooey, cheesy appetizer! And when you serve them with rye chips or cocktail rye bread? It’s basically just like eating a Reuben. Only so much better, and in bite size form.

They’re the perfect snacks for game day and also make a great addition to your favorite dinner, or as an ingredient in a comforting recipe, like this Italian Mac and Cheese! 🧀 Ingredients
The best thing about this recipe is that it starts with the BEST frozen meatballs, which saves so much time and makes this recipe not only delicious, but also incredibly easy to make. I used Farm Rich Flame-Broiled Homestyle Meatballs, made with quality ground beef and pork and 11 grams of protein per serving. They can be found online or in the freezer section at grocery stores using the Farm Rich product locator. I purchased mine at Walmart.
- 1 package Farm Rich Homestyle Meatballs
- 2 cups sauerkraut
- 2 cups shredded Swiss cheese, divided
- 1 (15 ounce) can condensed cream of onion soup
- 1 cup Thousand Island dressing
- 1 tablespoon caraway seeds
📋 Instructions
It literally doesn’t get any easier than this! Simply combine the ingredients, mix them together, and bake. No chopping, no peeling, and no fussing required!
Combine the ingredients – In a large mixing bowl, combine frozen Farm Rich Homestyle Meatballs, sauerkraut, cream of onion soup, 1 cup Swiss cheese, Thousand Island dressing, and caraway seeds. Mix until combined.
Transfer to baking pan – Transfer the mixture to a 9×13 inch baking pan. Sprinkle with remaining Swiss cheese.
Bake – Bake at 350° for 30-35 minutes, until hot and bubbly.
Garnish & serve – Garnish with minced parsley and serve with rye bread or rye chips.
🌶 Recipe variations
We love how simple this recipe is and the fact that it remains true to the classic Reuben flavors. As with any recipe, of course, there are always ways to “make it your own”. Here are some of our favorite ideas:
- Add 1/2 cup sauteed onions
- Add 1/2 cup finely chopped corned beef
- Add 1/4 cup pickle relish for extra tanginess
- Substitute 8 ounces softened cream cheese for half of the Swiss cheese
- Add 1/2 teaspoon cayenne pepper for a spicy kick
- Substitute any flavor of condensed cream soup
- Serve them in a bun for a Reuben Meatball Sub
♨️ Storing & reheating
Leftovers can be stored in an airtight container in the refrigerator for up to 5 days. To reheat, transfer to an oven-safe baking dish and heat at 350° for 15-20 minutes, until cheese is melted and meatballs are hot. Leftovers can also be frozen and reheated at 350° for 45 minutes or until hot.
