This Piña Colada Fruit Salad is the perfect taste of summer! Made with just 5 ingredients and ready in 15 minutes or less, this salad is ideal for summer picnics, parties, or lazy days by the pool!

You know how some people spend their entire summer at the pool? And eat their lunch there, and play with friends there, and basically live there from June through August? Well. That couldn’t be further from my reality. And I’m totally ok with it.
Because the truth is I’d rather be sitting on the beach… sipping piña coladas. Which also couldn’t be further from my reality!
So I’m choosing the next best thing: this Piña Colada Fruit Salad. Made with fresh pineapple, toasted coconut, and a creamy honey lime dressing, it’s delicious enough to satisfy all my piña colada desires. And it almost makes me feel like I’m sitting on the beach!
Best of all… it’s actually good for you. Made with fresh fruit, plain Greek yogurt, and natural sweeteners, it’s an indulgence you can feel good about! Which makes it extra perfect for poolside or picnics or really any summertime activity.
And even though I’d love to say you don’t have to share, the reality is that once your family and friends get a glimpse of it, this Piña Colada Fruit Salad won’t last long. (Consider yourself warned!)

what you’ll need for this recipe
Pineapple – Pineapple is the main ingredient in this recipe. For the best flavor and texture, I would definitely recommend using fresh instead of canned or frozen. I used one whole pineapple, cut into bite sized chunks.
Greek yogurt – Greek yogurt is the base of the creamy honey lime dressing. I used 1/2 cup plain Greek yogurt (substitute sour cream OR vanilla Greek yogurt.)
Honey – I added 2 Tablespoons honey to the plain yogurt to sweeten it. *If you use vanilla yogurt, you may want to omit the honey.
Lime juice – 2 teaspoons of lime juice adds delicious tartness to this fruit salad, and just like the pineapple, I would recommend using fresh lime juice if possible.
Toasted coconut – No piña colada is complete without coconut, so I added 1/4 cup toasted coconut just before serving.

Toast the coconut. I used my toasted coconut recipe!
Make the dressing. In a medium mixing bowl, combine sour cream, honey, and lime juice. Stir until smooth and creamy.
Cut the pineapple. Cut the pineapple into chunks; add tot he bowl and toss in dressing to coat.
Top with coconut. Transfer to a serving bowl; top with toasted coconut immediately before serving.

Recipe Variations
- Use canned or frozen (thawed) pineapple in a pinch
- Add fresh strawberries to make a strawberry colada fruit salad
- Use vanilla yogurt or any flavor of yogurt
- Substitute sour cream for the Greek yogurt
- Add a splash of vanilla extract or coconut extract
- Add a splash of rum (adults only!)
- Use regular shredded coconut instead of toasted coconut
- Omit the coconut and add cream of coconut, which can be found in the liquor department but does not contain alcohol

As far as I know you can’t buy it toasted….but 325 degrees for 5-10 minutes with a few quick stirs and you’re good to go!

Love the sound of this recipe but dread the thought of cutting up a whole pineapple. what do you think about using canned chunks?
