Do you ever just fall into habits without even realizing it’s happening? And before you know it that thing you did once is suddenly the thing you do ALL. THE. TIME? Yeah. I’m familiar.
And of course it can’t be good habits….like working out or volunteering or cleaning my kitchen. No, it’s always habits I’d rather not have. And mostly….they’re related to food. Our latest food related habit, that started out as an occasional treat but has somehow become the thing we HAVE TO HAVE!? Takeout! I seriously can’t get enough of it!
And it makes perfect sense that takeout would be our “thing”…since we rarely go out, and ordering takeout is the next best thing. I know it’s not the worst habit in the world…and it’s not like we actually do it that often….but it’s probably not the best habit, either. And the biggest problem with it? Salads are my go to. And there’s a SERIOUS shortage of delicious salad options out there.
Which is exactly where this Caribbean Grilled Chicken Salad comes in. Because even though getting takeout is fun….there are only so many Southwest salads a girl can eat. Am I right!?? And with all the fresh summer produce at Pick ‘n Save, how could I resist making a fully loaded and delicious Caribbean salad!?!?
I LOVE Caribbean flavors….and this Caribbean Grilled Chicken Salad is packed with them! Between the mango and the pineapple and the avocado and the marinated chicken and the honey lime vinaigrette…..it’s a flavor explosion! And it all starts with BrightFarms Spring Mix.
Have you heard of BrightFarms? It’s an organization that finances, designs, builds and operates greenhouse farms at or near supermarkets, thereby cutting time, distance, and cost from the produce supply chain. I recently found their salad mixes and I’m totally in love! They’re fresh, vibrant, and flavorful….and I love their philosophy.
And….they’re the perfect base for this Caribbean Grilled Chicken Salad. But the best news of all? You can get everything you need to make this salad right at Pick ‘n Save! And then…you can use the leftover fruit to make Fish Tacos with Mango Salsa or Hawaiian Grilled Chicken Kabobs or Tropical Shrimp Lettuce Wraps.
