- 1 whole pineapple cubed
- 1/2 c. sour cream or plain Greek yogurt
- 2 Tbsp. honey
- 2 tsp. lime juice
- 1/4 c. toasted coconut
In a medium mixing bowl, combine sour cream, honey, and lime juice. Stir until smooth and creamy.
Add pineapple chunks; toss in dressing to coat.
Transfer to a serving bowl; top with toasted coconut immediately before serving.
