Homemade Salsa is always a favorite, and this Cucumber Salsa is especially perfect for summer! Made with fresh cucumbers, tomatoes, bell peppers, red onion, and cilantro, it’s crisp, flavorful, and so refreshing!
Anyone who has a garden knows that once summer rolls around, the cucumbers are abundant. As in… you need ALL the ways to use them up! And this Cucumber Salsa is one of our all time favorites. It’s easy to make, packed with amazing flavor, and always a crowd favorite.
So what makes this salsa SO good? Obviously… the cucumbers! They add a whole new level of freshness to fresh salsa… and when you combine them with bell peppers, tomatoes, and red onions, it’s literally the most refreshing salsa you’ve ever tasted.
Perfect for eating with tortilla chips, as a side dish, or on top of any of your favorite meals! Think of it as pico de gallo… plus! And truthfully? Once you try it, you may never go back!
Cucumber Salsa Ingredients
Cucumbers – I used English cucumbers in this recipe because they’re essentially seedless and tend to be extra crunchy. You can feel free to substitute any type of cucumbers, depending on what’s available.
Bell peppers – Bell peppers add a little extra flavor and crunch to this salsa. I used a combination of green and yellow peppers for color variation, but any color bell pepper will work!
Tomatoes – It wouldn’t be salsa without tomatoes, so this recipe calls for 2 large Roma tomatoes.
Onion – I used red onion, which is mild in flavor and perfect for salsas.
Jalapeño – I LOVE adding jalapeños to my salsa because I always enjoy a little bit of heat. If you’re looking for less spice, feel free to remove the seeds or omit the jalapeño altogether.
Cilantro – Even though I know cilantro is controversial, I always add it to my salsa recipes. If you’re not a fan of cilantro, you may want to substitute fresh parsley.
Citrus juices – I used a combination of lemon and lime juice – freshly squeezed, of course!
Garlic & salt – Finally, you’ll need 2 cloves of fresh garlic and a teaspoon of salt (more or less according to tastes.)
How to make Cucumber Salsa
Chop the veggies – Chop the cucumbers, peppers, tomatoes, and onions into small pieces, about 1/4 inch. Add them to a medium mixing bowl.
Mince the jalapeño, cilantro & garlic – Mince the jalapeño (remove seeds for less heat as desired), cilantro, and fresh garlic. Add it to the chopped veggies in the bowl.
Squeeze the citrus juices – Squeeze in the fresh citrus juices and add the salt.
Stir to combine – Stir well; enjoy immediately or refrigerate until ready to use.

Ingredients

This is so good! I made it for the first time for Easter and served it with salmon. I just made it again and served it with tuna steak. We have eaten leftovers with corn chips. So fresh!
