    The ULTIMATE Breakfast Sandwich! This sandwich is loaded with bacon, eggs, cheese, peppers, onions, and a sweet & spicy sriracha sauce... all on a toasted bagel. Breakfast has never tasted so good!

    When it comes to breakfast, we all have our favorites. And for me... this Bagel Sandwich is IT. I've been ordering this very sandwich for years at my favorite bagel shop... so I decided it was probably time to make my own. And I've never been so glad about anything in my entire life.

    It's a simple sandwich, really. Bacon, eggs, cheese, veggies, sauce. But there's something about the combination of flavors and textures that's just SO addictive. I literally crave it multiple times a week.

    And the really great thing about it? It's incredibly easy to personalize. Don't like bacon? Use sausage instead (I especially love it with turkey sausage!) You can literally switch up anything from the type of cheese to the type of bagel and everything in between. I mean... I'm not sure why you'd want to since it's SO GOOD as is! But then again... we all have our favorites, right?

    Ingredients

    For the sandwich:

    • 2 tablespoons butter or olive oil
    • 2 bagels
    • 4 slices cooked bacon
    • 2 slices cheese
    • 2 large eggs
    • ¼ red pepper, thinly sliced
    • ¼ green pepper, thinly sliced
    • ¼ red onion, thinly sliced

    For the sauce:

    • ¼ cup mayo
    • 1 teaspoon sriracha
    • ½ teaspoon honey

    Breakfast Sandwich ingredients

    Instructions

    1. Heat 1 tablespoon of butter or olive oil in a small skillet. Add sliced peppers and onions, season with salt and pepper, and saute 3-4 minutes. Remove from skillet and set aside.
    2. In the same skillet, heat the other tablespoon of butter or olive oil. Add the eggs, season with salt and pepper, and cook over easy or sunny side up.
    3. Toast the bagels and assemble the sandwiches. Add sauce & enjoy!

    Recipe variations

    • Substitute sausage patties for the bacon
    • Use any type of bagel or substitute English muffins
    • Substitute cream cheese for the sriracha sauce
    • Add sliced avocado
    • Substitute scrambled eggs for over easy eggs
    • Use 2 eggs per sandwich
