Ingredients

Sandwich

  • 2 bagels
  • 4 slices cooked bacon
  • 2 slices cheese
  • 2 large eggs
  • 1/4 red pepper thinly sliced
  • 1/4 green pepper thinly sliced
  • 1/4 red onion thinly sliced

Sauce

  • 1/4 cup mayo
  • 1 teaspoon sriracha
  • 1/2 teaspoon honey

Instructions

  • Heat 1 tablespoon of butter or olive oil in a small skillet. Add sliced peppers and onions, season with salt and pepper, and saute 3-4 minutes. Remove from skillet and set aside.
  • In the same skillet, heat the other tablespoon of butter or olive oil. Add the eggs, season with salt and pepper, and cook over easy or sunny side up.
  • Toast the bagels and assemble the sandwiches. Add sauce & enjoy!
