As someone who loves to celebrate, I’m always on the lookout for fun new drink recipes. And as much as I love mimosas, sometimes I just want to mix things up! This bellini recipe is my favorite alternative.

There’s something about brunch that gets me every time. And by something, I mean everything! From the delicious food to the early start time to the fact that it always feels a little bit like playing hooky, brunch time is the best time.
Really… what’s not to love!? Especially when there are drinks involved. Whether it’s mimosas or boozy coffee or Bloody Marys… there are so many brunch cocktails to choose from. And these bellinis are definitely my new favorite.
I have to admit – I put off making them for far too long. Because for some reason, I had the idea that they’d be difficult. Or time consuming. Or, for some reason, one of those things I should only order at a restaurant.
But now that I realize just how wrong I was!? You better believe they’re my new go-to.

🥂 What is a bellini?
A cocktail made with sparkling wine and peach puree or nectar. It is often served with brunch.
🍑 Ingredients
Made with just 3 ingredients, cocktails really don’t get much easier than this. I love the fresh pop of flavor from the peach puree, and I love the fact that it’s a little bit unexpected.
If peaches aren’t in season, don’t worry! These taste just as amazing with frozen peaches. Just be sure you thaw them first. And if you’d like to adjust the sweetness, feel free to add more or less simple syrup according to your tastes.
- 3 fresh peaches, sliced OR 1 (12 oz.) bag frozen sliced peaches, thawed
- 1/4 c. simple syrup
- 1 (750 ml.) bottle of prosecco or champagne
🍾 Instructions
I love that bellinis are both easy to make AND completely celebration-worthy. All you need is a blender, some champagne flutes, and a spoon for mixing.
You can even make the peach puree in advance and/or store leftover puree in the fridge for a few days. I prefer to pop open a new bottle of bubbly every time, though. There’s something about fresh bubbles that ALWAYS makes a drink taste better!
- Combine peach slices and simple syrup in a blender; puree until smooth.
- Divide peach puree evenly among 4 champagne flutes (approx. 1/4 cup each).
- Add champagne slowly to fill.
- Stir to combine; garnish with fresh peach slices.

🍓 Recipe variations
- Use fresh peaches in place of frozen
- Substitute raspberries, strawberries, mango, or any of your favorite fruits
- Adjust the sweetness by using a sweeter sparkling wine
- Use fruit nectar in place of puree for a lighter cocktail
- Use flavored simple syrup for added flavor
- Garnish with fresh herbs such as basil or mint
- Add a shot of your favorite liqueur to the champagne and peach puree
🌡 To make in advance
To make this recipe in advance, prepare the peach puree and store in an airtight container in the refrigerator for up to one week. Keep the champagne chilled, as well, and making the bellinis is as easy as popping the bottle!
