Baked Reuben Sandwiches have all the flavors of a classic Reuben with a delicious sauce that’s baked right in! An easy, delicious sandwich that’s perfect for game day, St. Patrick’s Day, or weeknight dinner!
There are certain foods we can’t help but associate with holidays. Like Thanksgiving turkey, Easter ham, or St. Patrick’s Day corned beef.
And while I love a good holiday meal as much as the next person, to be honest, I probably prefer all of them in sandwich form! Especially when the sandwiches are sliders. Baked Turkey Sliders? Ham & Cheese Sliders? Sign me up! And definitely sign me up for these Reuben Sliders.
A delicious combination of corned beef, gooey cheese, sauerkraut, rye bread, and a sweet & savory sauce… they’re the perfect sandwiches for feeding a crowd.
So bring on St. Patty’s Day, game day, Friday, or really any day we’re craving Reubens. I know EXACTLY what I’m making!
what you’ll need for this recipe
Bread – A classic reuben sandwich is made on rye bread, so I used rye rolls for these sliders. If you can’t find rye rolls, substitute Hawaiian rolls or any type of small sandwich rolls.
Corned beef – Corned beef is a must, and you can use sliced, shaved, or thick cut corned beef depending on availability and preference.
Cheese – Swiss cheese is traditionally used in reuben sandwiches. I used sliced Swiss.
Sauerkeraut – Sauerkraut is another key ingredient in reubens and in these sliders! Canned, jarred or fresh sauerkraut will all work (I used jarred.)
Sauce – This sauce mimics the flavors of Thousand Island or Russian dressing. I used a combination of butter, brown sugar, ketchup, worcestershire sauce, and dried mustard.
how to make baked reuben sandwiches
Make the sandwiches. Layer the corned beef and cheese in the rolls, dividing the ingredients evenly. Add sauerkraut. Place sandwiches in a 9 x 13-inch baking dish or rimmed baking sheet. (For easy clean-up, line the pan with aluminum foil!)
Add the sauce. In a small saucepan, combine the sauce ingredients. Bring to a boil over medium-high heat. Remove from heat and pour or brush the sauce over the sandwiches.
Refrigerate overnight. Cover with foil and refrigerate sandwiches overnight. (*Note: this step can be eliminated if necessary.
Bake. Uncover the sandwiches and bake at 350° for 20-30 minutes. Remove from oven and serve with Thousand Island or Russian dressing as desired.
Recipe Variations
- Use rye bread instead of rye rolls
- Use Hawaiian rolls or any type of small dinner rolls
- Substitute mozzarella or provolone for the swiss cheese
- Make it a “Rachel” (use turkey instead of corned beef!)
- Add 1 teaspoon caraway seeds or poppy seeds
- Add prepared horseradish to the sauce
- Add pickles (dill or bread & butter) to the sandwiches
- Make a double or triple batch on sheet pans!

Leftover sandwiches can be stored, covered, in the refrigerator for 3-4 days. To reheat, transfer to a small oven-safe container. Cover with foil; heat at 350° for 15-20 minutes or until cheese is melted and sandwich is warmed through.

I used to love thunderstorms in CA. Because they’re so tame and harmless. In TX though they can be super scary..usually because there’s tornados that come with them. But your stories scare me even more!!!! But these sandwiches look amazing 🙂
