Pineapple Upside Down Martini

All the flavors of pineapple upside down cake… in a delicious cocktail! This Pineapple Upside Down Martini is made with just 3 ingredients and is sure to be a favorite!

There are some flavor combinations that are guaranteed to work no matter how you mix them… and Pineapple Upside Down Cake is one of them. It’s a classic combo that’s ALWAYS delicious, and we love trying it in every way we can think of.

From coffee cake to mimosas to pineapple upside down donuts… you seriously can’t go wrong! And this Pineapple Upside Down Martini is no exception.

A simple combination of pineapple juice, flavored vodka and grenadine, it’s sweet, tropical, and tastes just like your favorite dessert! The perfect cocktail for holidays, wedding showers, or any celebration!

What you’ll need for this recipe

Pineapple juice I used 100% pineapple juice, which can be found in cans or bottles in either the juice aisle or the refrigerated juice section. Be sure to shake it well before using because it has a tendency to separate.

Vodka – Flavored vodka gives this martini the delicious “cake” flavor. I used cake flavored vodka, but you could also use vanilla vodka or whipped cream flavored vodka.

Grenadine – A splash of grenadine adds the cherry flavor to this recipe and also gives it a pretty, layered appearance. Just be sure to pour slowly along the edge of the glass so the colors don’t mix.

Garnishes – Pineapple chunks and maraschino cherries add the perfect finishing touch! I would highly recommend using longer toothpicks that can rest on the edge of the glass so the ingredients don’t all mix together.

How to make a pineapple upside down cake martini

Combine the ingredients. Combine the pineapple juice and vodka in a shaker with ice.

Shake vigorously. Shake to chill.

Strain and add grenadine. Strain into individual martini glasses, then carefully pour the grenadine along the edge of the glass. The grenadine will settle to the bottom.

Garnish. Garnish martinis with pineapple and cherries as desired. Enjoy!

Recipe Variations

  • Use a pineapple juice blend in place of 100% pineapple juice
  • Substitute vanilla or whipped cream vodka for cake vodka
  • Add seltzer for a lighter cocktail
  • Omit the grenadine for less sweetness
  • Use a fresh pineapple wedge for the garnish

Make Ahead Tip

This recipe is easy to make ahead for stress-free entertaining! To do so, combine the ingredients as directed, wrap in plastic wrap, and store in the refrigerator for up to 24 hours.

Ingredients

  • 2 ounces pineapple juice
  • 2 ounces cake flavored vodka
  • 1 teaspoons grenadine
  • 1 pineapple chunk
  • 2 maraschino cherries

Instructions

  1. Fill a cocktail shaker 2/3 full with ice.
  2. Add the pineapple juice and vodka; shake well.
  3. Strain into a martini glass, then slowly pour the grenadine along the edge of the glass. It will settle at the bottom.
  4. Garnish with pineapple and cherries.
  5. Enjoy!
