This Pineapple-Vanilla Breeze Cocktail is like sunshine in a glass! It’s deliciously sweet, tropical, and bursting with creamy vanilla flavor. The perfect drink for spring, summer, or anytime you need a little sunshine in your life!
You guys….I think we’re almost there! That magical time of year when we actually SEE our neighbors! In case you couldn’t tell, I’m pretty excited about it. And for good reason….my neighbors are awesome!
Now. I realize that not everyone feels this way. In fact, I realize I might be in the very small minority. But honestly? After being spoiled for the past 4 years by neighbors who actually like one another, I can’t imagine ever going back!
Our kids play together, we rely on one another for help, and come together when something happens in our neighborhood….and we’ve definitely shared a cocktail or two in our day. There’s nothing like the convenience of sharing a cocktail with neighbors, and with warmer weather on its way, I can’t wait to pour one for all of us.
I recently discovered Nielsen-Massey Vanillas and oh my goodness….I’m obsessed! If you’ve never heard of Nielsen-Massey, it’s a family-owned company that was founded in 1907 and is now owned and operated by the third generation of Nielsens. It uses a cold extraction process instead of heat extraction to preserve all the 300+ distinctive flavor compounds that are present in vanilla beans….and the difference shows!
While cocktailing with a friend one recent afternoon, we put together this delicious concoction using Nielsen-Massey Madagascar Bourbon Vanilla. It’s basically a jazzed up, sophisticated Malibu & Pineapple….and you wouldn’t believe the amazing difference the vanilla makes!
It’s sweet and creamy, and adds a rich, mellow undertone to an already-delicious combination. Best of all, it balances out the acidity of the pineapple juice and makes for a smooth cocktail you could sip on all day long!

Pineapple-Vanilla Breeze
Ingredients
- 4 oz. pineapple juice
- 2 oz. Malibu Rum
- 1 tsp. vanilla Nielsen-Massey Madagascar Bourbon Vanilla
- 2 Tbsp. crushed pineapple optional
- 1 fresh pineapple wedge for garnish
Instructions
- Combine pineapple juice, Malibu, and vanilla in your favorite cocktail glass.
- Add crushed pineapple, if desired, and ice.
- Garnish with fresh pineapple wedge.

Fantastic!! I made these for a holiday BBQ, they were a hit. The vanilla bourbon cuts the acid in the pineapple just right.
