Case in point: these Feta Phyllo Bites. They’re perfect in so many ways, from the delicate size to the savory sweet combo to the crispy, creamy texture… all in one bite.
I love these bites for holiday parties, showers, or wine nights with friends. They’re perfect for walking around and mingling, and they pair well with your favorite wine, cocktail, or sparkling water.

Phyllo shells – Phyllo shells are the perfect little container for these feta bites. They’re light and crispy, yet sturdy enough to hold up to the cream cheese and feta. Phyllo shells are fully baked and can be found in the frozen foods aisle near the ice cream and other desserts. If you’re unable to find them, you can substitute phyllo dough, puff pastry, spring roll wrappers, or crescent roll dough.
Cream cheese – Cream cheese is the main ingredient in the filling and combines perfectly with the crumbled feta for a deliciously creamy taste and texture. I used full fat plain cream cheese.
Feta cheese – Crumbled feta offers a delicious level of flavor and balance to the cream cheese. I used pre-crumbled feta, which is available in 4 ounce containers, but you can also use an 8 ounce block.
Thyme – Fresh thyme packs a ton of flavor and a pop of freshness to these bites. It can be found in the produce aisle near the other fresh herbs. If you’re not a fan of fresh thyme, feel free to substitute rosemary, basil, or tarragon.
Honey – A drizzle of honey balances out the savory flavors in this recipe and really takes it to the next level. I used raw, unfiltered honey, but any honey you have on hand will work just fine. You could also consider flavored honey for a delicious twist.
Sesame seeds – Finally, sesame seeds offer a crunchy, slightly nutty note to these bites. I used raw seeds, but toasted seeds would be equally delicious. You could also substitute chopped walnuts, almonds, or pine nuts if you prefer.

Combine the cheeses. In a small mixing bowl, combine the cream cheese and feta cheese. (For best results, be sure that both cheeses are at room temperature!) Use a hand mixer to blend the cheese together until smooth and creamy.
Fill the phyllo shells. Arrange the phyllo shells on a large, rimmed baking sheet. (Do not thaw beforehand!) Spoon the cheese mixture evenly into the shells, about 1/2 Tablespoon per shell.
Bake & garnish. Bake at 350° for 7-8 minutes. Remove the shells from the oven and sprinkle with sesame seeds and fresh thyme. Drizzle with honey to taste and garnish with fresh cracked pepper. Serve immediately.

Ingredients

- 4 ounces cream cheese softened to room temperature
- 2 ounces crumbled feta cheese softened to room temperature
- 1 teaspoon sesame seeds
- 2 teaspoons fresh thyme
- 1-2 Tablespoons honey
