I have to admit. I NEVER drink enough water. It’s one of those things that’s on my list of New Year’s resolutions every year… but for some reason I have a really hard time making the change. Because when it comes down to it? I don’t really like water. Coffee? Yes. Wine? Yes. But water? Not so much.
Unless, of course, it’s Cucumber Water. It’s the type of water most often served at spas… and for good reason. Not only is it a little bit fancy… but it also tastes so much better! Which is a sure way to get us all drinking more of it.
So why cucumbers and water? Well… the flavor of cucumbers pairs perfectly with water. It’s light and refreshing and so very drinkable… and when you throw in some lemons and fresh mint, it’s basically summer in a glass. Water… but so much better.
What do you need for Cucumber Water?
Water – I used 8 cups of filtered water to make a full pitcher. You can use any type of water you prefer, including sparkling water. IF you decide to use sparkling and don’t plan to drink it right away, add only half of the full amount and then refrigerate until ready to serve. Add the remaining half just before serving.
1/2 cucumber – I used half of an English cucumber, which was about 2 cups thinly sliced. I prefer English cucumbers in most recipes, and especially in water. You can feel free to substitute any type of cucumber you have on hand.
Lemon – Adding lemon to this recipe adds another element of color and flavor, and offers a delicious balance to the flavor of the cucumber. I used one whole lemon, thinly sliced.
Fresh mint – I also love adding mint to my cucumber water. Cucumber + mint is a classic combo, and the mint pairs well with the lemon, too!
Ice – Ice is optional, but I always prefer my water cold. You can add ice to the glasses just before serving.
How to make Cucumber Water
- Pour water into a large pitcher
- Add the thinly sliced cucumbers and lemons
- Add fresh mint sprigs to taste
- Stir and let sit 4 hours or overnight (not necessary, but this helps the flavors develop)
Recipe variations
- Substitute thinly sliced limes for lemons
- Use fresh basil instead of mint (or omit altogether)
- Use sparkling water in place of flat water
- Add thinly sliced strawberries or other fruit
- Add honeydew or cantaloupe for cucumber melon water
- Muddle the cucumbers, lemons, and mint for a stronger flavor infusion
