Cucumber Caesar Salad is the best of both worlds! Crisp cucumber salad combined with creamy caesar salad in a deliciously fresh, flavorful side dish that’s always in season!
You guys. This salad was literally made for me. It combines two of my all time favorites – cucumber salad and caesar salad – in a deliciously crunchy, creamy salad that’s such a fun twist on the classics.
And… it has bacon! NOT because it really needs bacon (does anything actually ever need bacon?) But because bacon is the perfect way to tie these two salads together in an even more delicious way.
Now, I guess you could ask the question “why mess with perfection?” Because the truth is, both cucumber salad and caesar salad are icons of perfection. And I guess my only response is… why not!?
There’s something magical about a delicious mash-up of two things you love, and this Cucumber Caesar Salad is definitely case in point. Mini cucumbers, fresh Parmesan, toasted breadcrumbs, crumbled bacon, and creamy caesar dressing. A heavenly combo you HAVE to try.
what you’ll need for this recipe
Cucumbers – Cucumbers are the star of this recipe. I used one pound of mini seedless cucumbers, which is about 4 cups sliced. Feel free to use any type of cucumbers you have available!
Parmesan – Parmesan cheese is a key ingredient in caesar salad, and fresh is always best! I used about 1 cup of freshly shaved Parmesan. Feel free to use a little less or a little more according to taste.
Bacon – Crispy bacon adds delicious flavor and texture to this salad. I used about 1/4 cup cooked, crumbled bacon.
Panko crumbs & butter – In place of croutons, which would compete with the cucumbers, I used buttery toasted panko crumbs. Another good option would be parmesan crisps!
Caesar dressing – Finally, homemade Caesar Dressing brings it all together in the most delicious way.
Recipe Variations
- Use any type of cucumbers you have available
- Add sliced red or green onion
- Add chopped red pepper or tomatoes
- Make it vegetarian by omitting the bacon
- Add grilled chicken or shrimp
- Substitute homemade croutons or parmesan crisps for the crispy breadcrumbs
- Use your favorite store bought dressing in place of homemade
storage tips
Leftover salad can be stored in an airtight container in the refrigerator and is best when eaten within 1 day. Because of the high moisture content in the cucumbers, it gets soggy quickly. (The one downside to this recipe!)

Cucumber Caesar Salad
Ingredients
- 16 ounces mini seedless cucumbers
- 1 cup Parmesan cheese shaved
- 4 ounces bacon cooked & crumbled
- 1/2 Tablespoon butter saltled
- 1/4 teaspoon panko breadcrumbs
- 1/2 cup caesar dressing or to taste
Instructions
- In a small skillet, 1/2 Tablespoon butter over medium heat. Add the breadcrumbs and toast over medium heat, stirring regularly, until golden brown. Remove from heat.
- Slice the cucumbers into thin (1/4 inch) slices. Transfer to a large bowl.
- Add 1/2 cup shaved Parmesan, 1/4 cup crumbled bacon, 2 Tablespoons toasted breadcrumbs, and caesar dressing to the cucumbers. Toss until evenly coated.
- Garnish with additional Parmesan, bacon, and breadcrumbs.
