Breakfast Pizza Carbonara is a quick and simple pizza filled with all the flavors of carbonara. This Italian pizza is loaded with bacon, eggs, and Parmesan cheese – perfect for breakfast, lunch, or dinner!
The weekend is here – woo hoo! Do you have any fun plans? I’m hoping to lay low and have some quality time with the family. Dinner out with the kids, a trip to the library, date night with the hubby, pizza with cousins, a chance to sleep in (haha – never), a lazy Saturday morning breakfast……
I say it all the time, but our busy little life could really use some more down time. And weekends are probably the only time to get it! Some time of not running and rushing, some time of slowing down and snuggling and reading together and making art and baking cookies…..that are not for the blog…..
And some time of eating a meal without the threat of the school bus or bedtime hanging over our heads! Yes, this weekend, we’re going to take our time.
Now, to be clear, this carbonara pizza actually doesn’t take much time at all. But it IS the perfect way to slow down and get comfortable. After all, what’s more comfy than bacon, eggs, and cheese…..and pizza!?…..in the morning? Nothing! Cheers to a relaxing weekend, my friends!
what you’ll need for this recipe
Flatbread – Flatbread is the base of this pizza, and either homemade or store bought will work just fine. I used naan, but you could also use pita, focaccia, or any variety you prefer.
Olive oil – In lieu of sauce, I drizzled olive oil over the flatbread to give this pizza delicious flavor without taking over. I used extra virgin olive oil, but you can feel free to use any type you have on hand.
Garlic – I also used 2 cloves of fresh minced garlic in this recipe. Garlic packs a ton of flavor into a small bite and is even better sautéed.
Bacon – I used 4 pieces of cooked, crumbled bacon. Feel free to use regular or turkey bacon OR substitute ham or pancetta.
Eggs – I topped this flatbread pizza with 2 over easy eggs. Feel free to cook them sunny side up, over medium, or any way you like them.
Parmesan cheese – Parmesan cheese is traditionally used in carbonara pasta and is the only cheese on this breakfast pizza. I used 1/4 cup of shaved Parmesan.
Parsley – I used fresh parsley as the garnish on this pizza. Feel free to leave it out if you prefer.
