Way back when, before our kids were old enough to be in sports and clubs and after school activities, I never really understood how families could NOT eat dinner together. Because way back when, it felt so easy! And so obvious. And essential. And then….our kids got older, and started piano lessons, and joined Girl Scouts, and now three are playing soccer….and let’s just say family dinners suddenly don’t feel easy OR obvious! In fact, most nights they feel impossible!
So we’ve been doing what families everywhere have been doing forever. We’ve been improvising. Which, around here, looks like a lot of sandwiches, buttered noodles, and quesadillas. And for now (knock on wood) my kids really aren’t complaining. Of course, I know that won’t last forever….and when they get tired of having the same three things over and over (haha) I’m prepared. And when it’s a fun twist on pizza? Even better! This Stuffed Pepperoni Pizza Bread is different than other French Bread Pizza recipes because it’s STUFFED! Which means less bread and more cheese…which, in my book, is a total win.
Not only is this Stuffed Pepperoni Pizza Bread perfect for busy nights…it also makes an awesome game day snack. And it’s something everyone will LOVE! Stuffed Pepperoni Pizza Bread
- 1 loaf French bread
- 1 8 oz. jar pizza sauce
- 3 c. shredded Italian cheese blend
- 1/2 c. mini pepperoni slices
- 1/2 tsp. dried oregano
- 1/2 tsp. dried basil
- 1/2 tsp. garlic powder
Cut French bread in half.
Slice off tops and scoop out centers, leaving approx. 1/2 inch around edges.
Spread pizza sauce inside hollowed out bread.
Fill with cheese and top with pepperoni slices and seasonings.
Bake at 400 degrees for 10 minutes or until cheese is fully melted.
