- In a large skillet over medium-high heat, cook and crumble 1 lb. of ground turkey.
- Stir in 12 oz. frozen riced cauliflower, 1/4 c. taco seasoning, and 1/4 c. water. Cook, stirring, until cauliflower is heated through.
- Remove from heat and top with 1 c. shredded lettuce, 1/2 c. chopped tomatoes, 1 diced avocado, 1/4 c. black beans, 1/4 c. finely shredded cheese, and 2 Tbsp. red onion.
- Garnish with minced cilantro.

The best way to reheat this Taco Skillet is to separate the fresh vegetables from the turkey mixture. The turkey can be reheated in a microwave or stovetop and then topped with the fresh (unheated) vegetables.

This was delicious! No leftovers.
I sautéed the onions with the turkey (they hide from the kids better when softened) and added the beans when I put in the cauliflower.
Definitely will make again!!
