what you’ll need for this recipe
Potatoes – I used 2 pounds of baking potatoes (Russet/Idaho), peeled, shredded and squeezed dry. I used the medium hole on the shredder for the perfect texture. Be SURE to squeeze as much of the liquid out of the shredded potatoes as you can, since excess moisture will keep the waffles from binding together. I did this on a large plate using paper towels.
Onion – I added 1 chopped yellow onion for extra flavor and texture. If you’re not an onion fan you can feel free to omit it.
Eggs – 2 large eggs, lightly beaten, help the ingredients stick together and make these waffles crispy on the outside and fluffy on the inside.
Flour – 3 Tablespoons of flour also help to bind the ingredients together. I used all purpose flour, but you can definitely substitute a gluten-free variety if you prefer.
Baking powder – 1 teaspoon of baking powder helps the waffles rise and brown.
Seasonings – Along with 2 Tablespoons of Everything Bagel Seasoning, I also added 1/2 teaspoon of salt. This simple combination gave the waffles the perfect amount of flavor.
Melted butter – I added 3 Tablespoons of melted salted butter to the waffle batter and used more to brush on the waffle iron in between batches. Butter infuses the waffles with even more delicious flavor, which is why I opted for it instead of oil.

Prep the potatoes & onions. Chop the onion, then wash, peel, and shred the potatoes. I used the medium hole on my cheese grater, which gave these waffles the perfect texture. Be sure to squeeze as much moisture out of the shredded potatoes as possible, using paper towels or a clean kitchen towel.
Combine ingredients and mix well. In a large mixing bowl, combine the shredded potatoes and onions with the rest of the ingredients. Use a large spoon to mix well.
Cook in a waffle iron. Heat a waffle iron and brush with melted butter. Working in batches, scoop the potato mixture into the waffle iron and cook until golden brown and crispy. I used a 4 inch waffle iron and scooped 1/3 cup of potatoes for each waffle. I would, however, recommend using a larger waffle iron to save time.

Everything Potato Waffles
Ingredients
- 2 pounds baking potatoes peeled, shredded and squeezed dry
- 1 medium yellow onion diced
- 2 large eggs lightly beaten
- 3 Tablespoons all purpose flour OR gluten free flour
- 3 Tablespoons melted butter plus more for the waffle iron
- 1 teaspoon baking powder
- 2 Tablespoons everything bagel seasoning
- 1/2 teaspoon salt
Instructions
- Chop the onion; set aside.
- Wash, peel, and shred the potatoes. (I used the medium hole on my cheese grater.) Squeeze the shredded potatoes dry using paper towels.
- In a large mixing bowl, combine the shredded potatoes, diced onions, eggs, flour, melted butter, baking powder, everything bagel seasoning and salt. Use a large spoon to mix well.
- Heat a waffle iron and brush with additional melted butter. Working in batches, scoop the potato mixture into the waffle iron and cook until golden brown and crispy.
