It feels like pickles are really having a moment. And they have been for a while now! And honestly? I feel like they deserve it. They’re crunchy, they’re salty, and they make the perfect little snack.
But. Pickles aren’t just for snacking… they’re also a delicious addition to so many different recipes! From Dill Pickle Pinwheels to Dill Pickle Coleslaw, pickles pack a punch and add so much flavor into every bite.
And this Dill Pickle Chicken Salad is proof. I originally saw the idea at a local deli and obviously had to try it. And once I did? I knew I could make it even better.
Because the key to a good Pickle Chicken Salad is balance. Which is why I added fresh parsley, fresh dill, and just a splash of pickle juice. Resulting in a perfectly balanced, perfectly delicious chicken salad I literally ate straight from the bowl.
what you’ll need for this recipe
Chicken – 2 cups chopped, cooked chicken. I used rotisserie, but you can use any type.
Pickles – 3/4 cup chopped dill pickles. I used petite dill pickles because they’re the crunchiest, but any of your favorite dill pickles will work well in this recipe. Add a splash of pickle juice for extra flavor!
Red onion – 2 Tablespoons finely chopped red onion adds delicious flavor and pairs perfectly with the other flavors in this chicken salad.
Dill & Parsley – I used a combination of fresh dill and fresh parsley for delicious flavor and a pop of freshness. Use any fresh herbs you have on hand!
Mayo – 1/2 cup mayo adds delicious creaminess. Use more or less to taste!
Dijon – Dijon mustard adds a delicious finishing touch to this recipe. Substitute any type of brown or yellow mustard.

Prep the ingredients. Chop the chicken, pickles, onion, and fresh herbs.
Combine & mix. Combine all of the ingredients in a medium bowl and mix well. Enjoy immediately or refrigerate for later.
