One of the first questions everyone asks when they find out about our kitchen remodel is how much I LOVE cooking in my new kitchen. A valid question, for sure. A food blogger with a new kitchen? It’s like a dream! But. It’s summer. And my desire to cook? It’s basically nonexistent. Am I the only one? Does anyone actually cook in summer!??
I, for one, am at the bare minimum. I’m in sandwich and salad mode, with lots of grilling, some slow cooker action, and fresh fruit at every meal. And my use of the oven? It’s mainly reserved for veggie roasting and pizza making. And I must say….it’s exactly the way I want it to be.
After all, summer was made for lighter things. Grab & go meals. Less time in the kitchen and more time outside! And this Bacon Cheddar Ranch Chicken Salad? Well, it was definitely made for summer.
We love all things bacon cheddar ranch. A few of our favorites? Bacon Cheddar Ranch Snack Mix , Bacon Cheddar Ranch Pinwheels, and Bacon Cheddar Ranch Corn Dip. And, of course, this Bacon Cheddar Ranch Chicken Salad. It couldn’t be easier to make, with just six ingredients, and everyone LOVES it! Because you really can’t go wrong with chicken + bacon + cheese + ranch dressing. Am I right?
And as delicious as it is in a pretzel roll or on your favorite bread, the truth is I could eat this Bacon Cheddar Ranch Chicken Salad straight from the bowl. Or with veggies. Or crackers. - 4 cups chopped, cooked chicken
- 1/2 cup ranch dressing
- 1/4 cup mayo
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped, cooked bacon
- 2 Tablespoons fresh chives
- Combine all ingredients in a medium mixing bowl.
- Stir well; garnish with additional cheddar cheese and fresh chives as desired.
