Ingredients

  • 2 cups chicken cooked & chopped
  • 3/4 cup dill pickles chopped
  • 1/2 cup mayo
  • 2 Tablespoons red onion finely chopped
  • 2 Tablespoons fresh dill finely chopped
  • 1 Tablespoon fresh parsley finely chopped
  • 1 teaspoon dijon mustard

Instructions

  • Chop the chicken, pickles, red onion, and herbs.
  • Combine all the ingredients into a bowl; mix well.
  • Enjoy in a sandwich, as a dip, or on top of a salad.

Notes

Recipe Variations

  • Substitute Greek yogurt for all or some of the mayo
  • Use any type of pickles in place of dill pickles
  • Substitute green onions for the red onions
  • Use any combination of fresh herbs
  • Add additional veggies, such as chopped bell pepper, avocado, cucumbers or tomatoes
  • Add chopped hard boiled eggs
  • Add chopped ham or bacon for extra flavor
  • Make it spicy by adding jalapeños, hot sauce or cayenne pepper
