This Cucumber Pineapple Salad is fresh, flavorful, and perfect for summer! A delicious combination of juicy pineapple, mini cucumbers, avocado and cilantro tossed in a simple lime vinaigrette, this salad is savory, sweet, and so refreshing!

I’m sure I’m not alone when I say I look forward to summer all year long. And not just for the sunshine and warm weather, but for the fresh fruits and vegetables!
Because even though you can get most of the same produce all year round, nothing beats fresh, in-season produce. And right now, I can’t get enough of it!
Because right now, the strawberries are sweeter, the mangoes are riper, the pineapple is juicier, and the cucumbers are crunchier. Which makes for some absolutely AMAZING salads.
Case in point: this Pineapple Cucumber Salad! It’s a delicious combination of savory and sweet, crunchy and creamy, and all around completely refreshing. I paired it with a simple lime poppy seed vinaigrette, which works perfectly with the other flavors in the salad.
It’s fresh… and simple… and slightly unexpected! Enjoy!!

Pineapple – Fresh pineapple adds bright flavor and sweetness to the salad. I used 1 whole pineapple, cored and cut into bite-sized pieces. Substitute pre-cut fresh pineapple or canned pineapple chunks for convenience.
Cucumbers – Cucumbers add crunchy fresh flavor to the salad. I used 16 ounces mini cucumbers (Persian cucumbers), cut into bite-sized pieces. Substitute English cucumbers if you prefer.
Avocado – Avocado adds a creamy richness to the salad. I used 1 large avocado (substitute 2 smaller avocados.)
Red onion – Red onion adds an extra zip of flavor and crunch to the salad. Feel free to omit if you have an aversion to raw onion!
Cilantro – Chopped cilantro adds fresh herbal flavor to this salad. I used 1/4 cup, chopped. Fresh mint or basil are also delicious options.
Vinaigrette – Homemade lime vinaigrette is light and sweet and ties the salad together.

Chop the fruits and veggies. Chop the pineapple, cucumbers, and avocado into bite-sized pieces. Chop the onion and cilantro into small pieces. Combine all fruits & vegetables in a large bowl.
Make the vinaigrette. In a small jar with a lid, combine the vinaigrette ingredients and shake vigorously.
Combine. Pour the shaken vinaigrette over the salad and toss to combine.

Leftover salad can be stored in an airtight container in the refrigerator for 3-4 days. For maximum freshness, eat sooner than later!

Ingredients
Salad
- 1 pineapple cored and cut into bite-sized pieces
- 16 ounces mini cucumbers cut into bite-sized pieces

- 1/4 cup red onion chopped

- 1/3 cup olive oil
- 1/3 cup white balsamic vinegar
- 2 Tablespoons lime juice

- 1 teaspoon poppy seeds
Instructions
- In a large bowl, combine chopped pineapple, cucumbers, avocado, red onion and cilantro.
- In a small jar with a lid, combine olive oil, white balsamic vinegar, lime juice, honey, and poppy seeds. Close jar tightly and shake vigorously.
- Pour vinaigrette over pineapple mixture; toss to coat.
