For most of my life, if anyone had asked me whether or not I like coconut… the answer would have been a definitive NO. For me it wasn’t as much about the flavor as it was the texture, and for whatever reason, it was a texture I couldn’t quite get behind. And then I tried toasted coconut. And my world turned upside down!

Now, I know what you’re thinking. Clearly I’m exaggerating. Which… I may be… but only slightly. Because toasted coconut really is on a whole different level! It’s crispy and sweet with a slightly nutty flavor, and it transforms every recipe it touches. Like Million Dollar Pie or Piña Colada Fruit Salad or one of my personal favorites… Coconut Rum Banana Bread.

And even though you can find it in some stores, the truth is it couldn’t be easier to make it at home. All you need is shredded coconut, an oven or stovetop, a spatula, and a pan. Trust me. Once you learn how to toast coconut, you’ll never go back!
