Bright, fresh Tropical Shrimp Lettuce Wraps combine the crunch and flavor of fresh fruits and veggies with the protein power of shrimp with the sweet tang of honey lime soyaki sauce. A deliciously light, refreshing summer meal!
If there’s one thing that is true about me, it’s that I LOVE salads! I love making them, I love eating them, and I love sharing them with other people. But. I do NOT love making them for my family. Or at least not for my kids. Because nine times out of ten, I get a turned up nose at even the mention of salad! How in the world am I raising such non-salad-loving kids!?
Or maybe the better question is how in the world am I raising such non-salad-loving kids who also happen to LOVE fruit?? It doesn’t seem to add up, does it? But it’s true. If I put any size bowl of fruit in front of them, they will completely devour it! Let’s see – they can’t get enough fruit, and I want them to eat more veggies. Hmmmmm….do you see where I’m going with this?
That’s right – why not mix the fruit with the veggies and see what happens? Of course, to make it work, I knew I would need to entice them with some of their favorites. Like mango….and pineapple….and avocado (for them), and then mixed in some of my favorites, like carrots….and red pepper….and, of course, leafy greens. And do you know what happened? They ate them! And they LIKED them!
Not only did they love the fact that they could eat mango for dinner, but they also loved the fact that this was a “no fork necessary” kind of meal. And let’s face it – any time you can eat with your fingers, it’s a guaranteed success! Good for adults, good for kids, and packed with all kinds of good things. Yep, I’d call this a winning recipe. And one that we’ll be eating all spring and summer long!
Tropical Shrimp Lettuce Wraps
Ingredients
Lettuce wraps
- 8 ounces cooked shrimp small or medium size
- 1/2 red pepper chopped
- 1/2 avocado chopped
- 1/3 cup matchstick carrots
- 1/4 cup mango chopped
- 1/4 cup red onion chopped
- 1/4 cup pineapple chopped
- 8 lettuce leaves
Soyaki sauce
- ⅓ cup soy sauce
- ⅓ cup teriyaki sauce
- ⅓ cup rice wine vinegar
- 1 Tablespoon minced garlic 6 cloves
- ¾ teaspoon onion powder
- ¾ teaspoon ground ginger
- 2 Tablespoons honey
- juice of 1 lime
Instructions
- Combine shrimp and chopped fruits & vegetables in a medium bowl.
- Prepare soyaki sauce by combining all ingredients in a container and stirring or shaking to mix.
- Spoon shrimp mixture into lettuce leaves; drizzle with soyaki sauce or dip lettuce wraps into sauce as desired.

Ooh these look perfect, Cathy! I am just getting on board with lettuce wraps recently, probably since I can’t eat wheat. Lettuce is an easy substitution for bread or flour tortillas and healthier too! I would love to have these for dinner. My kids actually eat salad pretty well, so I bet they would love these too!

This is so delicious looking. <3 My kids would eat this too, but mine are weirdos and actually love salad. I chop the lettuce fine and then douse it in dressing. They think they're eating soup. OK, so I don't douse it that much in dressing, but you get the point. #client
