These Lucky Charms Magic Bars are a magical dessert for everyone! Filled with Nilla wafers, marshmallows and coconut, these make for a quick snack and the perfect way to catch a leprechaun.
Growing up, Lucky Charms were a special treat. They fit in the category of “sugar cereal”, something we could have on Tuesdays and Saturdays, and something that we could only eat out of small blue and yellow plastic bowls. Key word: small. Like all kids, I remember loving the marshmallows and not thinking quite as much of the actual cereal….although I would happily suffer through it to get to the sweet, delicious marshmallows left in my bowl at the end.
Now that I’m all grown up, and could clearly eat Lucky Charms whenever I want to, they don’t hold quite the same appeal as they did during childhood. Go figure! Actually, I’m really not a cereal person at all….which probably explains why I rarely buy it for my family. Let’s be clear – they are NOT happy about this – but it’s hard for me to buy something I don’t care to eat, myself! And….it’s hard for me to buy the kinds they really want. You know, the sugar cereal!
It should come as no surprise, then, that when I brought a big box of Lucky Charms home recently, my kids went CRAZY! Or, more accurately, my entire family went crazy (husband included). I let them each have one small bowl…..and then told them enough was enough! Funny how the things our parents did kinda stick with us! Of course, I had other reasons for needing to limit their intake…namely, these magic bars!!
I love making and eating magic bars and I thought that a version made with Lucky Charms would be perfect for St. Patrick’s Day! Not only would Lucky Charms pair deliciously with so many of the classic magic bar ingredients….but if you think about it…..the combination would be the ideal way to catch a leprechaun. Sticky miniature marshmallows, gooey {green} sweetened condensed milk, coconut peaks and valleys, and all the brightly colored marshmallows are sure to attract at least one little fella…right? And even if they don’t, at least you can be guaranteed a magically delicious treat!

Life without Ranch dressing and Lucky Charms……the sacrifices we make for love!! 🙂 What else do you live without over in Australia?

That is FUNNY, Julie! I gotta be honest…..I don’t see the draw to either Rice Krispies OR Cheerios! But to each her own!! 😉

Heather Blackburn says
So cute!! Do you think I could omit the coconut and still be okay?
Heather Blackburn says
Ha! I see someone had the same question above. How much more of the Lucky Charms would you add?? another 1/2 cup?
Veronica Petzold says
Do you use sweetened or unsweetened coconut?
