Oh my gosh, you guys….Father’s Day!!! Are you ready? I, for one, am NOT. Sure, I’ve thought about it, but I currently have zero presents and zilch plans. Time to get a move on!
I’m pretty much in the same boat every year at this time. Knowing that Father’s Day is just around the corner, wishing that I had started planning for it sooner. But alas…..here I find myself….with less than two weeks to go and not even so much as an idea….!
To be honest, I think I’m a little jaded. From years and years of failed Father’s Day gift giving. Between the hammock and the lawn games and the hanging chairs, all of which have been returned, I must say my confidence in my ability to pick out a winning Father’s Day gift is limited. No wonder I put it off until the last minute….!
Luckily, though, at least I have the menu planned. Hawaiian Grilled Chicken Kabobs! I made these the other night and my husband LOVED them! And he’s not typically one to add fruit to a savory dish. But something happens to the pineapple when it’s mixed with chicken and potatoes and peppers and onions, covered in a sweet pineapple teriyaki marinade, and grilled to perfection. The result is absolutely delicious! Delicious enough to have the hubby going back for seconds and thirds….and that’s not counting the brats he started with!
Now, on to the gift. Unless you think an amazing meal counts as gift enough…..!? I won’t hold my breath on that one….but I will look forward to making these again in just a few short days! And I hope you will, too. You WON’T be disappointed!
Hawaiian Grilled Chicken Kabobs
Ingredients
Kabobs
- 1 pound chicken breasts
- 1/2 fresh pineapple
- 1 red pepper
- 1 green pepper
- 1 medium purple onion
- 12 small red salad potatoes
- 1/2 cup pineapple juice
- 1/4 cup teriyaki sauce
Sauce
- 1/4 cup teriyaki sauce
- 1/4 cup honey
- 1/4 teaspoon grated ginger
Instructions
- Cut chicken into 18 pieces.
- Cut pineapple and peppers into 12 pieces each.
- Cut purple onion into 12 pieces (it works best to use 3 layers at a time).
- Prepare kabobs by layering chicken, pineapple, peppers, onion, and potatoes on wooden skewers.
- Combine pineapple juice and 1/4 cup teriyaki sauce and pour over kabobs in a shallow dish. Place dish in refrigerator and marinate 30 minutes or more.
- Grill on medium heat, turning periodically, until chicken is cooked through.
- Combine sauce ingredients in a small bowl and mix well.
- Drizzle over grilled kabobs.

Delicious!! I made a few alterations. I didn’t have Ginger so I used 1/8t of nutmeg and 1/4 ground sage. I cut the red pepper by 1/4 because I didn’t know how spicy my kids would think it was… I did add 1T of cornstarch to thicken the sauce. And I cut the apple juice and added a shot of Jack Daniels Whiskey since I didn’t have Bourbon. Can’t make Bourbon chicken without liquor! It was amazing! And the kids couldn’t taste it nor were they affected for all of the extra cautious parents. Thanks for the recipe!
