We’re in the home stretch, my friends! School supplies have been bought, vacations have (mostly) been taken, and we started the last of our park & rec activities this week: gymnastics! I have to admit – at this point in the summer, starting a brand new activity was not high on my list of desires. If you ask me, we’ve already had our fill! Of course, the kids would beg to differ. They’re just SO excited to FINALLY be taking a gymnastics class. And honestly? After watching them these past two days, I wonder why I didn’t sign them up long ago!
Especially Greta. Girl’s got some talent! She’s been rocking it on the balance beam and doing flips on the rings and she made it more than halfway up the rope climb on her first try…..which is further than I ever made it as a kid! I’ve always thought she would make a great little gymnast. But seriously!? Why did I wait until NOW to get her into a class???
I guess some things are just like that. Good ideas that get put on the back burner until you finally decide to give them a try. Kinda like the “Luau” birthday party we have planned for the girls in just a few weeks. Something I’ve always wanted to do….but for some reason, haven’t made happen until now. Honestly, I can’t wait. Have you ever gone shopping for luau decorations? There are SO many choices…..and they’re all SO fun! 3 words: GIANT DRINK UMBRELLA. Life-size, in fact! Need I say more??
Of course, the decoration are just half the fun. The other half? The FOOD! When I think luau, I think pig roast. Or…..hot dogs! Especially with a side of my sweet Hawaiian Coleslaw! It’s packed with fresh pineapple, red pepper, shredded carrots, crunchy macadamia nuts, and a sweet, creamy honey dressing and it’s the PERFECT side dish for any of your luau foods.
Summer may be winding down, but there’s still plenty of time for grilling. So why not have a cookout!?Or a luau? I can’t wait for ours…..it’s going to be delicious!
Hawaiian Cole Slaw
Ingredients
Coleslaw
- 14 ounce package coleslaw mix
- 1 cup diced red pepper
- 1 cup diced pineapple
- 1/2 cup shredded matchstick carrots
- 1/2 cup chopped macadamia nuts (substitute slivered almonds
Dressing
- 1 cup mayonnaise
- 1 1/2 Tablespoons honey
- 1 1/2 Tablespoons rice wine vinegar
- 1 teaspoon celery salt
Instructions
- Combine cole slaw mix, red pepper, pineapple, carrot, and nuts in a large mixing bowl.
- In a separate bowl, combine dressing ingredients and mix well.
- Pour dressing over cole slaw and stir until combined.

Honey Teriyaki Mayonnaise
Ingredients
- 1/3 cup mayonnaise
- 1 Tablespoon honey
- 1 Tablespoon teriyaki wing sauce
Instructions
- Combine all ingredients in a small bowl.
- Enjoy with hot dogs, burgers, french fries, or any of your favorites.

Mine go back to school next week, and I know the cheese stands alone on this one, but GAH I am mourning the end of summer! Luckily, we’re someplace very warm, so I grill all year long. Hawaiian and Asian flavors are my absolute fav, so I am in love with these dogs!

Hi, I’ve made Hawaiian cole slaw for years, but I really like your recipe better than the one I usually use. I did add about 2 tsps of dehydrated onion to the dressing. I served this at a party and it was a hit. Thanks for the recipe!

The chunked pineapple will be too big for the recipe, but you can dice it down a little smaller to be more suitable. I’d buy the tidbits, they look to be a similar size to what’s in the picture.

This Hawaiian coleslaw was very tasty. I made it with the Hawaiian chicken and it went great with it. I used dry roasted slivered almonds (because that’s what I had) instead of the macadamia nuts but either would be great.

I thought this recipe was delicious Cathy! I’m not one to comment on recipes; in fact, this is my first review. I did start with chopping my own green and red cabbage rather than purchasing a store-bought bag of coleslaw. From there, I followed your instructions, and it was great! We’ll be having this again! I can’t wait to try this recipe for game night tonight, but my question is the recipe says that you need to put it in the crockpot for eight hours on low. My question is can I put it for four hours on high?
