Have I ever told you about myself growing up, and how much I LOVED school? It’s honestly a little hard to believe, looking back, just how much I loved it, but school was totally my element. My wheelhouse. My stomping ground. I’m sure it had something to do with being the third child, and seeing my older sisters in school, and being nothing but excited to start carrying my own real backpack and having my own real homework and learning my own real things….(as opposed to all the pretend school I had played at home)….
But whatever the reason, school was just.my.thing. And I was good at it! And from time to time, I got rewarded for it. I’ll never forget, in second grade, how we earned points in class toward bigger rewards. And how, every single time I was ready to “cash in” my points, I chose the exact same thing: lunch in the classroom with my teacher. Now, I know you may be wondering what the big deal was about having lunch in the classroom with your teacher. Well, let me tell you, it was a big deal! Because not only did we get to eat with her, but SHE MADE OUR LUNCH FOR US! And better yet? She took special requests.
I’m guessing most other kids in my class didn’t choose lunch with the teacher as their prize. No, they were probably more likely to choose an “actual” prize from the treasure box. And I’m guessing those that did typically requested something simple like pb&j or ham & cheese. But me? I wanted something different. Something memorable. I chose egg salad.
I have to laugh, looking back, at the thought of my teacher going through all the trouble of boiling and peeling eggs, and making them into egg salad (time after time, I might add) just for my sandwich. Oh, to be a kid. But seriously, who can blame me? Egg salad is delicious! One of my favorites to this day! Especially when it’s all jazzed up like this Cobb Egg Salad, loaded with bacon, lettuce, tomatoes, cheddar cheese, blue cheese, and ranch dressing. Cobb Egg Salad
Ingredients
- 6 Large Phil's Fresh Eggs hard boiled and peeled
- 4 pieces bacon cooked and chopped
- 1/4 c. diced grape tomatoes
- 1/4 c. chopped arugula
- 1/4 c. finely shredded cheddar cheese
- 1/4 c. crumbled blue cheese
- 6 Tbsp. mayo
- 2 tsp. dry ranch dressing mix
Instructions
- Chop eggs; add remaining ingredients and stir gently until mixed.
- Enjoy in a sandwich, with crackers, or all on its own!

2 tsp dry ranch dressing mix. This is super tasty and flavorful. I reduced the mayo to 1/4c and added 2 Tbsp ranch dressing instead of all mayo for an added ranch kick!

Absolutely delicious egg salad recipe!!! I was looking in my fridge for something to make, I had to use up leftover Easter eggs, and some bacon that’s been in there a couple of days, I had blue cheese, so I searched an egg salad recipe and this one came up!! I was looking for work lunch recipes and thankfully found this one! I found a recipe for ranch seasoning seasoning (I live in France and it doesnt exist here) and made my own. I cant eat tomatoes and Also didn’t have blue cheese so I used parmesan. Had it for lunch today using lettuce hearts as little boats. DELICIOUS! Thanks so much <3
