Creamy Brie Cheese, baked to soft, gooey perfection and topped with fresh wine-soaked blackberries. Delicious served with crackers or sliced baguette!
What is it about wine and cheese together that is so amazing? It’s quite possibly the perfect pairing…..the way the flavors and textures play off of each other, the way one brings out the best in the other. It’s a little bit like a good marriage, really…..two things that are completely different, coming together to create something beautiful.
Sounds romantic, doesn’t it? And it is. But now that Jorden and I have been married more than 10 years, we’ve come to find beauty in the imperfections just as much as anything else. And believe me – our lives are full of them! Between four kids and two jobs and…..four kids…..our lives have more than enough chaos and mess to go around. And as much as we would sometimes love to just have peace and quiet and *perfection*, I don’t think either one of us would really know what to do with ourselves. We love our mess….and we happen to think it’s beautiful in its own little way.
Now that Father’s Day is less than a week away, I’ve started to give some thought to what our day will look like. It’s funny – I used to envision a picture-perfect day from start to finish. I even tried to make it happen – with kids! Luckily, I’ve grown smarter over the years….and these days, a (relatively) quiet moment together on the patio, where we can enjoy a glass of wine and appreciate our chaos…..is enough. It has to be! Of course, I still want it to feel special…..which is why I’ve been dreaming up this Baked Brie.
It starts with delicious red wine, a touch of sugar, and some fresh, juicy blackberries. With its bright, fruit forward flavors and seductive layers of blueberry and blackberry, this wine is the perfect pairing for the berries.
While the berries are soaking, you take an 8 oz. round of Brie, cut off the top rind, and bake it to ooey gooey perfection.
Once the cheese is done, simply spoon the berries over the top. (The more time they’ve had to soak up the wine, the better!) Serve it with crackers or a sliced baguette…..and voila! Perfection. With just a touch of mess, of the gooey Brie/blackberry/Pinot variety. Aka the most beautiful (and delicious) kind of all!
Baked Brie with Wine-Soaked Blackberries
Ingredients
- 8 oz. round brie in wooden box
- 6 ounces fresh blackberries
- 1/2 cup Pinot Noir OR any red wine
- 2 teaspoons granulated sugar
- 1 baguette sliced
Instructions
- Dissolve sugar in Pinot Noir.
- Add fresh blackberries and allow to sit at least 30 minutes (the more time, the better!)
- Cut top rind off of Brie and return the cheese to its box.
- Bake on a flat baking sheet at 350 degrees for 10-12 minutes.
- Spoon blackberries onto baked brie. Drizzle wine as desired.
- Serve with baguette slices.
