Sweet Potato Bowl

The ULTIMATE Sweet Potato Bowl! This viral ground beef sweet potato bowl is loaded with roasted sweet potatoes, seasoned ground beef, cottage cheese, and all your favorite toppings. Add a drizzle of hot honey for a deliciously sweet & spicy kick!

Do you ever find yourself stumbling across the SAME recipe online… time and time again… until you finally decide to make it? I guess that’s the power of a “viral” recipe. It seems to show up everywhere!

Take, for example, these viral Sweet Potato Ground Beef Bowls. I’ve been seeing them all over the internet for months now… and they’ve always intrigued me. Because I’m a sucker for anything that combines savory and sweet… and when you add in a spicy twist, it’s pretty much a guaranteed win!

These bowls start with a “holy trinity” of ground beef, sweet potatoes, and cottage cheese… but where you take them from there is completely up to you. I added all my favorite toppings, like avocado, jalapeños, red onions, cilantro, and… of course… a drizzle of hot honey.

But they still needed something more. Something crunchy. Namely… tortilla strips! So I added a sprinkle of tortilla strips and it took these bowls to the NEXT LEVEL. Check out all my twists and variations below!

what you’ll need for this recipe

Sweet potatoes – Sweet potatoes are one of the main ingredients in this recipe. I used 2 medium sweet potatoes, cut into 1 inch pieces and tossed with olive oil, salt & pepper for roasting.

Ground beef – Ground beef is another main ingredient, although it can be swapped out for ground chicken or turkey. I used 1 pound 85% lean ground beef.

Taco seasoning – Taco seasoning is used to season the ground beef. Use my homemade taco seasoning recipe or any of your favorite blends!

Cottage cheese – Cottage cheese is the third main ingredient in these bowls. I used Daisy 2% cottage cheese, but any brand and percentage is fine.

Avocado, jalapeño, red onion, cilantro – I added sliced avocado, jalapeño, red onion, and cilantro as toppings. Feel free to add any of your favorites (see my suggestions below!)

Tortilla strips – Tortilla strips add a delicious crunchiness to this recipe. Crushed tortilla chips would also work well!

Hot honey – Finally, a drizzle of hot honey adds a sweet & spicy finish. I prefer Mike’s Hot Honey or homemade hot honey!

Roast the sweet potatoes. Wash and chop the sweet potatoes into 1 inch pieces. Toss with 1 Tablespoon olive oil, 1/2 teaspoon salt and 1/4 teaspoon pepper. Spread on a rimmed baking sheet and roast at 400°F for 15-20 minutes.

Brown & season the beef. While the potatoes are in the oven, brown and crumble the ground beef, then season it with your favorite taco seasoning. You can also use this time to prep your toppings.

Assemble the bowls. Assemble 2 (or more) bowls by adding sweet potatoes, ground beef, and cottage cheese to each. Top with sliced avocado, red onion, jalapeño, cilantro, and tortilla strips. Drizzle with hot honey and enjoy!

Recipe Variations

  • Substitute ground chicken, ground turkey, or any type of protein
  • Use regular russet potatoes instead of sweet potatoes
  • Substitute sweet potato fries
  • Add roasted broccoli or cauliflower
  • Add chopped tomatoes, cucumbers, or bell peppers
  • Add shredded cheddar or crumbled queso fresco
  • Add pepitas for crunch

Make Ahead & Storage Tips

These bowls are easy to prep ahead for lunches and dinners throughout the week. Simply roast the sweet potatoes and brown & season the ground beef, then portion the sweet potatoes, ground beef, and cottage cheese into individual serving containers. Chop your toppings and store them separately, adding them just before serving.

Ingredients

  • 2 medium sweet potatoes
  • 1 Tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pound ground beef I used 85% lean
  • 1 package taco seasoning
  • 1 avocado sliced
  • 1 jalapeño sliced
  • 1/4 cup red onion sliced
  • 1/4 cup tortilla strips
  • 2 Tablespoons hot honey
  • 1 Tablespoon cilantro minced

Instructions

  1. Preheat oven to 400°F.
  2. Wash and chop the sweet potatoes into 1 inch pieces. (I left the skins on, but you can peel them if you prefer.)
  3. Toss sweet potatoes with 1 Tablespoon olive oil, 1/2 teaspoon salt and 1/4 teaspoon pepper. Spread on a rimmed baking sheet and roast at 400°F for 15-20 minutes.
  4. While the potatoes are in the oven, brown the ground beef in a medium skillet, crumbling it as you go. Season with taco seasoning.
  5. Slice and chop the toppings to taste.
  6. Assemble bowls by combining sweet potatoes, ground beef, and cottage cheese. Top with sliced avocado, red onion, jalapeño, cilantro, and tortilla strips. Drizzle with hot honey.
