They’re easy to make – no oven required – and perfect for feeding a crowd.
It’s funny, because I feel like I knew this so well earlier in life. Brownies and bars were my go to dessert anytime someone was coming over. And then, somewhere along the line, I lost track of it.
It was just recently, when I was scrolling through an old recipe card box, that I rediscovered some old bar recipes I had collected over the years. Including the most amazing 7 Layer Bars and these Kit Kat Cookie Bars!
Loaded with chocolate, peanut butter, Club crackers, brown sugar, and plenty of butter… they’re crispy, creamy, rich, and SO very delicious.

what you’ll need for this recipe
Crackers – Crackers add a crispy crunch and salty flavor to these bars. I used Club Crackers, which are perfectly rectangular shaped, making them ideal for layering in a rectangular pan. Any type of thin, crispy, salty cracker will work well (Ritz or Townhouse are a couple other favorites.)
Butter – Butter is a key ingredient in these bars and is used in both the filling and the chocolate topping. I used salted butter to balance out the sweetness of the bars.
Graham cracker crumbs – Graham cracker crumbs add a bit of extra flavor and texture to the filling. You can either buy crumbs or make them by crushing graham crackers.
Chocolate – Chocolate chips are used in the chocolatey topping. I used bittersweet, but milk chocolate would also work well.
Peanut butter – Peanut butter is also used in the chocolatey topping, adding a slight peanut butter flavor to these bars. Use chunky or creamy (I used creamy.)
Sugar – Both brown sugar and granulated sugar are used to add sweetness to the layers. I used 1 cup light brown sugar and 1/3 cup granulated sugar.
Milk – Milk helps keep the filling from being too thick. I used 1/2 cup 2% milk.

how to make kit kat bars
Make the base. Line the bottom of a 9×13 inch baking pan with crackers.
Prep the filling. In a small saucepan, melt 2 sticks of butter. Stir in brown sugar, granulated sugar, graham cracker crumbs, and milk. Mix together until all the ingredients are thoroughly incorporated.
Make the layers. Spread half of the filling on top of the base layer of crackers, then top with another layer of crackers. Spread the remaining half of the filling on top, then add a final layer of crackers.
Add the topping. In a separate small saucepan, melt together 1/2 cup (1 stick) butter, 1/2 cup chocolate chips, and 2/3 cup peanut butter. Pour over the final layer of crackers and spread evenly over the top.
Chill. Refrigerate for at least 4 hours, until firm.

Tips & Tricks
Use Club Crackers. Since Club Crackers are rectangular in shape, they offer maximum coverage for the bottom of a 9×13 pan.
Adjust the peanut butter to taste. For less peanut butter flavor, decrease the amount to 1/2 cup.
Allow enough time to cool. For best results, cool in the refrigerator for 4 hours before cutting. For quicker results, cool in the freezer until firm.
Cut into small pieces. These bars are rich, and a little bit goes a long way. I would suggest cutting them into small pieces and having a few!
