S’mores Brownie Cheesecake Bars: no-bake brownie bars stuffed with graham cracker crumbs, chocolate chips, and marshmallows and topped with a delicious layer of sweet cream cheese filling.
Happy Wednesday, friends….and welcome back to day 3 of S’mores Week! Lately it feels like we all have one goal around here….and that goal is making Myla smile! It must be funny to watch, really. The five of us, all crowding around her, using our best baby talk voices and exaggerated expressions. And it must be even funnier to watch our reactions when she finally gives us what we want!
There’s just something about a baby’s smile that is priceless, you know? Not only is it adorable to see the way their entire bodies get behind it…..but the way they look at you with those innocent little eyes makes you FEEL the love! It’s like instant gratification (you DO love me!!)
Having three older girls, I know that instant gratification in parenting is hard to come by. For the most part, it feels more like planting tiny little seeds that {might} blossom years from now…..and fighting off swarms of gnats and an occasional bee the entire time you are doing it! Parenting is hard!
Which is why little things like baby smiles or a kiss on the cheek from a 3 year old or a big hug from a 5 year old or a heart to heart with an 8 year old mean so much. The little moments of instant gratification that happen so quickly and make you feel so good. It’s the same reason I love no-bake recipes….like these No-Bake S’mores Brownie Cheesecake Bars! They’re the instant gratification of the dessert world, and I think I speak for all of us when I say sometimes that’s exactly what we need!
No-Bake S’mores Brownie Cheesecake Bars
Ingredients
Bars
- 14 ounce can sweetened condensed milk
- 2 ounces unsweetened chocolate chopped
- 1 teaspoon vanilla extract
- 2 cups graham cracker crumbs
- 1/3 cup mini chocolate chips
- 1/3 cup Jet-Puffed Mallow Bits
Icing
- 1/3 cup butter softened
- 3 ounces cream cheese softened
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- 2 ounces meltable chocolate like Candiquik
Instructions
- In a medium saucepan, combine sweetened condensed milk and unsweetened chocolate; cook and stir over low heat until just boiling.
- Reduce heat; cook and stir for 2-3 minutes more. Remove from heat.
- Stir in vanilla and most of the graham cracker crumbs (reserve 2 Tablespoons).
- Spread evenly into foil-lined 8×8 inch pan.
- Sprinkle with 1/3 cup mini chocolate chips, 1/3 cup marshmallow bits, and remaining 2 Tablespoons graham cracker crumbs and press down gently into the bars.
- Refrigerate until firm.
- In a medium bowl, combine butter, cream cheese, vanilla, and powdered sugar and beat with electric mixer until smooth.
- Spread over chilled bars; drizzle with melted chocolate and refrigerate 30 minutes or until firm.
