This Garlic Shrimp Pasta is perfect for summer. Made with grilled shrimp, minced garlic, olive oil, and fresh herbs, it’s light, fresh, and perfectly seasoned. Garnish it with fresh shaved Parmesan for extra delicious flavor!
There are certain types of meals that are almost a guaranteed win with my kids… and pasta is one of them! Whether it’s Fettuccine Alfredo or Baked Spaghetti or Creamy Sun Dried Tomato Pasta, my kids have never met a noodle they didn’t like.
And it’s safe to say this Garlic Shrimp Pasta is in their top 5. The first time I made it, in fact, my daughter told me it tastes like something she would order at a restaurant.
And honestly? She’s right! Not only because the grilled shrimp is absolute perfection, but because the “sauce” on this pasta is hardly a sauce at all. It’s a simple mixture of olive oil, lemon juice, fresh garlic, and fresh herbs. And the flavors speak for themselves!
This pasta is easy to make and ready in 30 minutes or less. And as perfect as it is for summer… it’s also delicious any time you’re craving a restaurant-quality pasta dish at home!
what you’ll need for this recipe
Pasta – 1/2 pound of pasta, any shape. I used spaghetti rigati, which is a ridged spaghetti noodle. Linguine, fettuccine or angel hair would also be delicious.
Shrimp – 1 pound of grilled shrimp. I used my Grilled Shrimp recipe, which is super flavorful and works well in this dish. Any type of cooked shrimp will work.
Flavored olive oil – I used my Shrimp Marinade, which doubles as a delicious sauce or dip. Pro tip: make a double batch of it and use half as a marinade for the shrimp and half as a sauce for the pasta.
Parmesan – Parmesan cheese adds additional flavor and texture to this dish. I used freshly shaved Parmesan, which is always the best!
Fresh parsley – Fresh parsley adds color and flavor to this pasta. Use any of your favorite fresh herbs to garnish.
