So have you been on Facebook lately? And seen all the countdowns to Christmas? I seriously can’t even handle it. And not just because the thought of Christmas freaks me out (which it does) or because I haven’t even started thinking about gifts (which I haven’t)….but because I feel like fall JUST started!
We literally went from weather in the 60’s and 70’s to weather in the 40’s, and I’m still getting used to it. And trying to enjoy it before the temperatures drop into the 30’s and stay there.
It’s Fall! (NOT Christmas….yet….) And we have so much FALL to accomplish. First on my list? Jump into all the soup recipes I can get my hands on. Starting with this delicious French Onion Noodle Soup! Do you LOVE French Onion Soup as much as I do?? I literally craved it all throughout my last pregnancy, and I would never dream of turning down a bowl of it.
Well, this version has all those crave-worthy flavors plus the most deliciously thick, chewy, just-like-homemade noodles. Which instantly takes it to the next level in terms of favorite fall soups.
It makes a great weeknight dinner and is also perfect for serving to guests or cozying up to on a lazy fall weekend. If you love French Onion Soup, you’re going to fall in love with this comforting, delicious twist!
This French Onion Noodle Soup is the BEST soup to warm up to on a cold day!
Whether you make it for your family or serve it to guests, this soup is sure to be a hit. The first time I made it, I have to admit I was a little nervous about whether my kids would eat it. But? They loved it! They gobbled it up! And they asked for seconds. It helped that they recognized the flavor from my French Onion Risotto and my Slow Cooker French Onion Chicken. But even without that, I swear there’s something about the noodles that pulls them in…..and once you try it for yourself you’ll know exactly what I mean.
Tips for making French Onion Soup:
- Go low and slow. The BEST (only) way to caramelize onions is to cook them slowly over medium-low heat and stir them regularly to avoid burning. It takes a good 30-40 minutes to bring out the best flavor, so be patient!
- Find a balance between savory & sweet. A good French Onion Soup has both sweet and savory notes, and the right balance might be different for different people. Don’t be afraid to experiment a bit with the sweet & savory measurements until you find the right fit for you!
- Let it simmer. The flavors in French Onion Soup develop as it simmers, so don’t skip that final step. And in the case of this French Onion Noodle Soup, the simmering is an essential part of cooking the noodles, so definitely don’t skip it!
French Onion Noodle Soup
Ingredients
- 1/2 cup salted butter
- 4 sweet onions sliced
- 8 cups beef broth
- 1/4 cup cooking sherry
- 1/2 Tablespoon granulated sugar optional
- 2 Tablespoons all purpose flour
- 2 1/2 teaspoons salt
- 2 teaspoons Worcestershire sauce
- 2 bay leaves dried
- 2 sprigs fresh thyme
- 12 ounce bag egg noodles
- 8 ounces Swiss or Gruyere cheese shredded
Instructions
- Melt butter in a large soup pot over medium heat.
- Add sliced onions and cook over medium heat until caramelized. Stir regularly to prevent burning. Onions will be a rich golden brown color.
- Add in beef broth, cooking sherry, sugar, flour, salt, and worcestershire sauce. Whisk until smooth.
- Add bay leaves, thyme sprigs, and egg noodles
- Bring soup to a boil; reduce heat and simmer 30 minutes or until noodles are fully cooked.
- Top with shredded cheese; garnish with fresh thyme and ground pepper.

Thanks for the recipe. I know what I am cooking for dinner later today. Probably start it about 4 p.m. I may have to run out for more onions. We like Swiss or provolone on top of our French Onion soup. I’m not sure if I can find that brand of noodles at our super market in southern Maryland. I may have to settle for the remaining left over egg noodles from the local farm stand that I used in chicken noodle vegetable soup a couple of weeks ago. I’m thinking since it’s going to be a main course, it would be good to throw some kind of beef into it. Maybe buy a nice steak, broil it, and lay it slices over the melted cheese for a little extra protein.

Was good but very sweet. Next time I will leave out the sugar. Might add some Umami paste from Trader Joes to give it more depth as well. Will make again with some adjustments. Took me almost 2 hours to get the onions to caramelize but was worth the wait.

We tried this last night. Prepared the soup precisely as indicated in the recipe. Unfortunately it was entirely too sweet. The 2 TBS of sugar is entirely too much. The caramelized sweet onions alone would have made it just right for this dish which is supposed to be mostly savory.
We ate a little bit and then tossed it. What a waste. BEWARE, the granulated sugar ruined it 🙁

Made this today and it was really good, very flavorful broth. I didn’t have sherry, so I skipped it. Reduced sugar to 1 Tb. And had dried thyme, not fresh. I love Reames noodles and I liked it much better than French onion soup with the bread. Thanks for the recipe!

I might reduce the amount to 1Tbsp. I added 1.5Tbsp of balsamic vinegar at the end to cut the sweet. I’m excited to taste it leftover to see if the flavors are even deeper. Great recipe!

This was absolutely delicious! I did make some slight adjustments based on what I had in the kitchen (5 cups beef broth, 3 cups chicken broth, dried thyme instead of fresh) but it came out perfectly. I didn’t find it to be too sweet as others have mentioned. I don’t know if you had any leftovers, Cathy, but by the next day the egg noodles had absorbed most of the liquid and it turned into more of a comforting noodle casserole. Still super yummy! My husband loved it, too. This recipe is a keeper!

Hi i live in Australia we don’t have the frozen version of the noodles… the ones we have only need too be in boling water for a couple of minutes so would it be best too simmer the broth for 30mins before adding the noodles

Have you ever tried putting this in the crock pot? I have a Rock Crock from pampered chef. I’m going to carmelize the onions, low and slow, then transfer the pot to the slow cooker and simmer for the next 8 hours. Think it will work? Noodles will be added at the end, of course.

This was really good! For those wondering about the sugar, I used a little less than a tbsp of sugar(because that was all I had left) and it was not too sweet. Plan on it taking an hour with caramelizing those onions for at least 30 minutes. We ordered French onion soup at a fancy french restaurant in San Diego recently and my husband said this had more flavor! I might try to find a way to give it a little more umami flavor but definitely a great starting point.
