Ever since I was a kid, egg salad has been one of my favorites. And honestly, what’s not to love!? It’s creamy, flavorful, and absolutely delicious. And it’s one of those things I can never quite get enough of.
Needless to say, I’ve made a LOT of it in my day, and this recipe is my all time favorite. Made with a combination of hard boiled eggs, Miracle Whip, mustard powder, salt & pepper, it’s classic, simple, and completely perfect.
My favorite way to eat it, of course, is in a sandwich. But this egg salad is also delicious on top of crostini, crackers, salads, or even straight out of the bowl.
My only advice? Make more than you think you need. Because EVERYONE loves egg salad, and if you happen to have any leftovers? It’s just as good (if not better) the next day!

🥚 Ingredients
Egg salad is an incredibly easy recipe to make, and I love the fact that it’s made with just a handful of ingredients. For the eggs, you may be able to find hard boiled ones at the store, but I would definitely recommend boiling your own. It’s easy to do and much less expensive.
As for the sauce, there are a few variations you may consider. I personally LOVE the tangy zip of Miracle Whip, but if you’re someone who prefers mayo, you can feel free to substitute.
I also prefer mustard powder, but some recipes call for yellow mustard or a combination of the two.
- 6 hard boiled eggs
- 6 Tbsp. Miracle Whip
- 2 tsp. mustard powder
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 Tbsp. fresh minced parsley (optional)
- paprika for garnish

Since boiling eggs takes about 30 minutes from start to finish, be sure you leave yourself enough time for this essential step. You may even decide to boil your eggs a day or two in advance so you have them on hand.
- Peel hard boiled eggs and chop them (eggs & yolks); transfer to a small bowl.
- Add Miracle Whip, mustard powder, salt, pepper, and minced parsley.
- Stir well to combine.
- Use in sandwiches, lettuce wraps, or on top of crostinis.
- Sprinkle with paprika and garnish with additional parsley as desired.
🥖 How to make crostini
Crostini are small pieces of toasted bread that are perfect for using in appetizer recipes. You can typically find them in the bakery section of your local grocery store, but it’s also easy to make your own. All you need is a loaf of french bread and some olive oil!
- Cut the bread into 1/2 inch pieces. I like to cut mine on an angle for more surface area.
- Place bread on a baking sheet and brush each piece lightly with olive oil.

One of my favorite things about egg salad is that it’s the perfect base for so many other yummy ingredients. Here are some easy ideas for mixing it up!
- Add minced jalapeños
- Add chopped, cooked bacon
- Stir in some pesto
- Add a few drops of hot sauce
- Add chopped onions or celery
- Add fresh basil or dill
- Add your favorite shredded cheese
- Substitute mayonnaise in place of Miracle Whip
- Add bacon, arugula, and tomato to make BLT Egg Salad

Now I’m hungry for egg salad….one of my favorites! I have used both Hellman’s and Miracle Whip…and I like the bottled mustard, but basically the same recipe I use. Yum yum~
